About the Role
Butcher and Barrel Sacramento is an award-winning farm-to-fork steakhouse in the heart of downtown Sacramento, one block from Golden 1 Center. Our menu rotates seasonally and is built around locally sourced, high-quality ingredients — which means our prep team plays a critical role in everything that hits the plate. We are looking for a reliable, detail-oriented morning prep cook who takes pride in their craft and understands that great steakhouse cooking starts long before the doors open.
Responsibilities
- Execute daily prep lists efficiently and accurately to set the line up for a successful dinner service
- Break down and portion cuts of beef and other proteins according to butcher specs and portion guides
- Prepare house-made stocks, sauces, marinades, dressings, and compound butters
- Prep and portion vegetables, starches, and garnishes in accordance with recipe standards
- Assist with receiving and organizing deliveries, verifying product quality and quantity against invoices
- Rotate and properly store all product following FIFO standards
- Maintain a clean and organized kitchen at all times, including coolers, prep areas, and equipment
- Label and date all prepped items accurately
- Communicate any supply shortages or quality issues to the Executive Chef or Sous Chef immediately
- Adhere to all food safety, sanitation, and health code standards
- Support the kitchen team as needed during the transition into lunch or early dinner prep
Qualifications
- Prior experience in a professional kitchen required; steakhouse or fine dining experience a plus
- Familiarity with butchery and protein portioning preferred
- Solid knife skills and understanding of basic cooking techniques
- Ability to follow recipes and prep lists with precision and consistency
- Strong organizational skills and the ability to work independently during morning hours
- Knowledge of food safety practices and proper storage procedures
- Ability to work in a fast-paced environment and adapt to a rotating seasonal menu
- Food Handler certification required or ability to obtain upon hire
- Must be available for consistent morning shifts, including weekends
