Id Est Hospitality Group operates Basta, BRUTØ, Dry Storage Bakehouse, Dry Storage Mill, Hey Kiddo, and Nonesuch.

Across Id Est, our restaurants are working parts of a larger food system. We source from regional farmers and producers, mill our own grain at Dry Storage, and use fermentation, preservation, and full-product utilization to get more from the ingredients we buy. The restaurants are where those systems are tested, applied, and improved in practice.

What BRUTØ is

BRUTØ is an 18-seat chef's counter serving a multi-course tasting menu in Denver. The program centers on research, fermentation, preservation, regenerative sourcing, live fire, and full utilization.

The hearth is at the center of the kitchen, but research drives much of what makes it to the menu. STUDIØ, BRUTØ's dedicated research and development lab, gives the team a place to develop, test, and refine ideas through fermentation, workshops, and experimentation before bringing that work into the restaurant.

The kitchen is the dining room. Guests sit directly at the counter, with the culinary and hospitality teams working together in the same space throughout the experience.

As a server, you are responsible for developing a strong understanding of the menu, beverage program, ingredients, and techniques so you can speak about them with confidence. Service at BRUTØ is personal and responsive; the goal is to provide each guest with the level of context, conversation, and attention that best supports their experience.

Responsibilities
  • Prepare the dining room, counter, and service stations for service
  • Provide attentive and knowledgeable service throughout a multi-course tasting menu
  • Develop and maintain a strong understanding of the food and beverage programs
  • Present and describe dishes and beverages clearly and confidently
  • Build genuine guest connections while adapting service to the needs and preferences of each table
  • Coordinate closely with the culinary and service teams to maintain pacing throughout the experience
  • Anticipate guest needs and respond thoughtfully throughout service
  • Execute wine, cocktail, and non-alcoholic beverage service to established standards
  • Maintain detailed knowledge of pairings, ingredients, sourcing, and preparation
  • Communicate allergies, dietary restrictions, and guest preferences clearly and accurately to the team
  • Maintain a clean, organized, and fully stocked service station
  • Participate in opening, closing, cleaning, and side work
  • Follow established service standards while contributing ideas for continuous improvement
  • Comply with health, safety, and responsible alcohol service regulations
Requirements
  • 2 to 3 years in fine dining or an environment of similar caliber
  • Comfortable working in an intimate dining room with a high level of guest interaction
  • Strong knowledge of food, wine, spirits, and restaurant service fundamentals
  • Comfortable speaking with guests about ingredients, preparation, sourcing, and beverages
  • Ability to build natural and thoughtful guest connections
  • Clear communication and strong time management
  • Attention to detail throughout a highly coordinated service
  • Ability to read guests and adapt the style and level of service to the individual experience
  • Team-oriented
  • Willingness to learn, take direction, and give and receive feedback
  • Able to stand for long periods and lift 50 lbs
  • Evening and weekend availability
Preferred
  • Experience in tasting menu or chef's counter restaurants
  • Wine or beverage education or certification
  • Experience with wine pairings and formal wine service
  • Experience working closely with chefs in an open kitchen environment
  • Familiarity with fermentation, live-fire cooking, or ingredient-driven restaurants
