Position Description
PURPOSE OF POSITION: Under the direction of the Director of Dietary Services, the Dietary Aide will assist in the preparation of food and cleanup in accordance with federal, state, and local standards, guidelines, and regulations governing food service operations. Cooperate with cooks, doctors, nurses, and cleaning staff.

Responsibilities:
- Deliver meals to units at designated times in a polite and friendly manner.
- Clean and set up dining tables and food trays.
- Assist in the kitchen as needed, including cooking, stocking ingredients, dishwashing and maintaining equipment.
- Loading and transporting of patient trays, cleaning of kitchen and equipment, operation of dishwashing and pot washing machine, floor maintenance, waste disposal, and cleaning duties as assigned.
- Assists on tray line as needed.
- Gather and check for supplies needed for washing dishes, racks, and disposal of garbage for next meal service.
- Assists with unloading of delivery shipment as directed.
- Makes coffee and hot water ten minutes prior to serving.
- Assists at stations on tray line as directed by supervisor or lead person.
- Loads completed patient trays onto racks for delivery to patient care units.
- Brings trays to patient dining rooms, mindful of times and appropriate unit locations.
- Retrieves racks of soiled trays after meal service for return to kitchen for disassembly and cleaning.
- Performs dishwashing duties, operating the dishwashing machine, assuring equipment is cleaned and sanitized.
- Places clean trays, dishes, and equipment on racks for air drying.
- Operates pot washer effectively, cleaning all pots, pans, and utensils.
- Uses cleaning solutions in adequate amounts and for specific jobs.
- Cleans worktables, kettles, steamer, mixers, and all cooking equipment as assigned.
- Disposes of trash in appropriate manner and as needed. Takes bins to disposal area, dumps, and cleans bin. Returns bin to Dietary Department and Pantry areas.
Following opening procedures: re-stocking and rotating of supplies, setting-up stations, and checking cleanliness of the section.
Preparing special feedings, nourishment, and snacks as ordered and scheduled.
Verifying ordered food items needed for meals are available and ready for service including garnish.
Ensuring all stored food and beverage items are properly covered, labeled, and dated.
Ensuring accuracy while preparing meal trays and dining room tables as per the tray ticket. Also check for accuracy of plated foods at the time of service and adjusting as required.
Performing all closing duties including adequately restocking the station for the next shift, breaking down, cleaning, and sanitizing station thoroughly.
- Cleans walk-in refrigerators and storage areas.
- Cleans patient dining rooms after every meal service; tables, chairs, counters, walls-wipe down spills.
- Assists in preparing salads, desserts and other food items only as directed by Supervisor, First Cook or Lead.
- Prepares food items according to written and verbal instructions including type, quantity, and portions. ___
- Prepares salads and desserts as directed. Mixes salad dressings and sauces as needed. ____________
- Prepares fruits and vegetables for salads and desserts using kitchen hand utensils. _________________
- Assembles trays on tray line up accurately according to menus. Assembles trays in an attractive manner. _

Skills:

Required Qualifications:
- Speak, read and write English.
- Physical: prolonged sitting, standing, walking, stretching, stooping, bending, pulling, pushing, and/or lifting/carrying 50 pounds or more.
Preferred Qualifications:
- High School or Equivalency Diploma preferred.
- Experience in psychiatric or general hospital or long-term care setting.
- Certification in food services a plus.
