Executive Chef/Kitchen Manager

Brownstone Pancake Factory is seeking an experienced, hands-on Executive Chef to oversee culinary operations across all four of our New Jersey locations.

We are looking for a strong leader who can maintain consistency across a high-volume, fast-paced multi restaurant location while continuing to elevate the quality, creativity, and execution Brownstone Pancake Factory is known for.

This is a multi-unit leadership position and requires regular travel between all four Brownstone Pancake Factory locations.

Responsibilities

• Oversee kitchen operations and culinary standards across all 4 locations
• Maintain consistency in food quality, presentation, recipes, portions, and execution
• Lead, train, develop, and hold accountable kitchen managers, chefs, and BOH teams
• Conduct regular visits and kitchen inspections at each location
• Ensure proper food safety, sanitation, cleanliness, and organization
• Monitor food costs, waste, portion control, inventory, and purchasing
• Work closely with ownership and management to improve kitchen efficiency and profitability
• Assist with hiring, training, scheduling, and development of BOH leadership
• Identify operational issues and implement solutions across locations
• Maintain recipe standards and ensure proper execution of all menu items
• Participate in menu development, seasonal specials, and new product creation
• Help streamline prep, production, and kitchen systems across the company
• Ensure each kitchen is properly staffed and prepared for high-volume weekends, holidays, and special events
• Support catering, school lunch, and Food Truck operations when needed
• Create a culture of accountability, teamwork, professionalism, and high standards

Qualifications

• Minimum 5 years of Executive Chef, Corporate Chef, or high-level kitchen leadership experience
• Multi-unit restaurant experience strongly preferred
• Experience managing high-volume restaurant operations
• Strong knowledge of food cost, labor management, inventory, purchasing, and kitchen systems
• Proven ability to train and manage large BOH teams
• Strong leadership and communication skills
• Excellent organizational and problem-solving abilities
• ServSafe certification certified
• Must have reliable transportation and be comfortable traveling between all four locations
• Must be available to work a flexible schedule, including weekends and holidays

This is not a position for someone looking to manage from an office. We are looking for a hands-on Executive Chef who will be present in our kitchens, work alongside our teams, identify problems, develop leaders, and ensure that every Brownstone Pancake Factory location operates at the same high standard.

The ideal candidate understands the demands of a high-volume restaurant environment and knows how to balance food quality, speed, consistency, cleanliness, labor, and food cost without sacrificing the guest experience.

With four locations, catering, school lunch programs, and our Food Truck operation, we are looking for an experienced culinary leader who can help us continue to grow while maintaining consistency throughout the company.
