What are the responsibilities and job description for the Director of Nutrition Services position at Brooklyn Kitchen | A division of Riviera Hospitality Group?
Director of Nutrition Services
Riviera Hospitality Group · Coney Island, Brooklyn, NY · Full-time
Salary Range: $110,000 to $125,000
Riviera Hospitality Group is a mission-driven food production and hospitality company that deliver meals that matter.
We're looking for a Director of Nutrition Services to lead nutrition strategy across our meal programs — someone who can move fluidly between regulatory compliance, menu development, and cross-functional leadership.
What you'll do This role ensures that all menus, labeling, and nutrition standards meet regulatory requirements while supporting scalable growth, operational efficiency, and product innovation.
You'll partner closely with Culinary, Operations, Procurement, and Business Development to align nutrition strategy with production realities, client needs, and margin goals — serving as the company's lead nutrition expert and subject matter resource for clients, regulators, and internal teams alike.
Day to day, you'll:
- Own nutritional compliance across all meal programs and lead FDA-compliant labeling, nutrition facts panels, and allergen documentation across all SKUs
- Develop medically tailored, culturally appropriate menus in partnership with Culinary and Operations
- Manage our menu and nutritional labeling platform (GAIA), including recipe inputs and production workflows
- Establish nutrition-related SOPs and train internal teams as we scale
- Support RFPs, new business, and client-facing nutrition inquiries as our resident expert
What you bring
- Registered Dietitian (RD) required; Master's in Nutrition, Public Health, or related field preferred
- Experience with medically-tailored meals, healthcare nutrition, and chronic disease management
- Familiarity with Food is Medicine / Medicaid/SCN meal program requirements
- Comfort with menu/nutrition systems (GAIA, Computrition, ESHA, CBORD, Odoo, or similar)
- Strong analytical skills — you can turn a cost analysis into a margin-improvement plan
- A leader's instinct for building scalable systems in a fast-moving, high-growth environment
If you're an RDN who wants your nutrition expertise to directly shape how care and food come together for the people who need it most, we'd love to hear from you.
