· Monitor food quality, appearance, freshness, and preparation times.

· Maintain proper food temperatures and follow all food safety, sanitation, and HACCP procedures.

· Complete and review required temperature, cleaning, opening, closing, and food safety logs.

· Ensure employees follow handwashing, glove-use, cross-contamination prevention, and proper food-storage procedures.

· Monitor hot-holding and cold-holding equipment throughout the shift.

· Provide training, coaching, feedback, and accountability to employees.

· Notify ownership or management of items that need to be ordered.

· Help receive deliveries and verify product quality, quantity, and temperature.

· Reduce food waste by following portion-control, rotation, labeling, and storage procedures.

· Ensure food and supplies are properly labeled, dated, stored, and rotated using FIFO procedures.

· Maintain cleanliness and organization throughout the kitchen, counter-service area, storage areas, and employee workspaces.

· Ensure dishes, utensils, equipment, floors, counters, and food-contact surfaces are cleaned and sanitized properly.

· Report equipment problems, maintenance concerns, food safety issues, employee injuries, or other serious concerns promptly.

· Support catering orders and large food-production needs when scheduled.

· Follow all Bridges and Tacos policies, procedures, recipes, and operating standards.
