Leadership Track to General Manager | $45,000–$55,000 Profit Participation

Brick City Pizza is a well-capitalized, independently owned restaurant seeking an experienced Assistant General Manager to join our leadership team.

This is not intended to be a permanent Assistant Manager position. We are looking for someone we can develop into the future General Manager of the restaurant—or, as Brick City expands, into a multi-unit leadership role.

The position includes a competitive base salary plus 5% participation in store-level profits, paid quarterly. Upon advancement to General Manager, the compensation structure is expected to include significantly greater profit participation, with the opportunity to earn up to 20% of store-level profits based on the scope of the role and performance.

The Opportunity

The Assistant General Manager will work alongside our existing leadership team and ownership to learn every aspect of the Brick City operation while taking immediate responsibility for shift execution, employees, product quality and customer experience.

We are especially interested in a current Assistant Manager or General Manager with Domino’s, Papa John’s, Marco’s, or a comparable hand-stretched pizza operation.

Our goal is to provide substantial support and training upfront, then steadily increase the AGM’s responsibility and autonomy. The successful candidate should ultimately become capable of running a profitable restaurant with limited day-to-day involvement from ownership.

A Hands-On Pizza Operation

Brick City is not a heat-and-serve restaurant.

We make our fresh dough, pizza sauce, Alfredo sauce, ranch, wings, smoked meats and much of our daily prep in-house.

For that reason, hands-on experience stretching fresh pizza dough from dough balls is required. Candidates must be comfortable hand stretching or hand slapping dough during live production and working the entire pizza line.

If you are a successful Domino’s or Papa John’s Assistant Manager or General Manager and already understand dough management, makeline execution, ovens, cut table, delivery flow and a busy Friday-night rush, your experience should translate extremely well to this position.

What You’ll Do

• Help lead daily restaurant operations, particularly during peak business periods.
• Deliver an exceptional customer experience and build a culture where taking care of the customer is a priority.
• Lead, coach, train and hold team members accountable.
• Maintain high standards for product quality, speed, cleanliness and food safety.
• Manage execution across dough, makeline, ovens, cut table, carryout, dine-in and delivery operations.
• Assist with hiring, scheduling, inventory, ordering and production planning.
• Monitor labor, food cost, waste, portion control and other controllable expenses.
• Help build strong employees and shift leaders who can operate effectively without constant supervision.
• Understand the financial performance of the restaurant and help identify opportunities to increase sales and profitability.
• Work directly with ownership on operational improvements and future growth initiatives.

What We’re Looking For

Pizza operations experience is required. The strongest candidate will be a current or former Assistant Manager or General Manager in a high-volume, hand-stretched pizza concept.

Candidates should have strong leadership ability, excellent customer-service instincts and experience managing people in a fast-paced restaurant environment.

Most importantly, we want someone who is interested in learning to run the business—not simply running shifts.

You should want responsibility, understand that profitability matters, be comfortable making decisions and have the ambition to grow into a larger leadership position.

Compensation & Career Track

Base Salary: $45,000–$55,000 annually, based on experienceProfit Participation: 5% of store-level profits, paid quarterly

The profit-sharing component is an important part of this position. We want our leadership team to benefit directly when the restaurant performs well.

This role is designed as a succession path to General Manager. As the successful candidate demonstrates the ability to independently lead the team, maintain operating standards, deliver excellent customer service and run a profitable restaurant, the position is expected to transition into full General Manager responsibility.

A General Manager compensation package may include up to 20% participation in store-level profits, creating meaningful upside for someone who successfully grows and improves the business.

Brick City also has the financial capacity and interest to pursue additional locations. If the company expands to multiple restaurants, the successful candidate could instead develop into a District Manager or other multi-unit leadership position, with compensation and responsibilities growing accordingly.
