What are the responsibilities and job description for the Pit Master position at Boulder Canyon Golf Club?
We are HIRING! The new Canyon Grille is looking for a PIT MASTER. Our new state of art facility, will be open in late spring 2026.
The job involves expert meat preparation, seasoning, and slow-cooking using smokers or grills to achieve perfect texture and flavor, managing fire/temperature, maintaining equipment, overseeing inventory, developing recipes, ensuring food safety, and coordinating with kitchen staff for timely service, often requiring early starts and physical stamina in a fast-paced environment.
Key Responsibilities:
- Meat Preparation: Trimming, seasoning, and preparing various meats (brisket, pork, ribs, etc.).
- Smoking/Grilling: Managing smokers, controlling heat, monitoring cooking progress over long periods, and ensuring consistency.
- Recipe & Flavor: Creating signature rubs and sauces, developing new recipes, and applying unique techniques.
- Inventory & Management: Managing wood, supplies, seasonings, checking orders, and stocking the line.
- Operations: Following recipes, maintaining equipment cleanliness, adhering to sanitation standards, & coordinating with staff.
- Customer Service: Assembling orders, serving customers, & handling special requests.
Essential Skills & Traits:
- Expertise: Deep understanding of different meats, cuts, & smoking techniques.
- Physical Stamina: Ability to work in hot conditions, lift heavy items, & be on your feet.
- Attention to Detail: Crucial for timing, temp control, & quality.
- Time Management: Handling cooking times & tight service schedules.
- Teamwork: Communicating effectively with other team members.
- Reliability
