The Dinex Group, Chef Daniel Boulud’s internationally acclaimed restaurant group, is seeking a skilled and motivated Tournant to join the culinary team at Blue Box Café. This role is ideal for a well-rounded culinary professional who thrives in a fast-paced, luxury dining environment and is passionate about excellence, precision, and teamwork.

The Tournant serves as a versatile member of the kitchen team, providing support across multiple stations and ensuring consistency in execution, preparation, and service standards.

Position Summary

The Tournant is responsible for assisting and rotating through various kitchen stations as needed, including hot line, garde manger, pastry support, prep, and production. This role requires strong culinary fundamentals, adaptability, organization, and the ability to maintain high standards under pressure.

Essential Duties and Responsibilities
  • Prepare and cook menu items according to Blue Box Café recipes, standards, and presentation guidelines
  • Rotate through multiple kitchen stations and provide support based on operational needs
  • Assist with daily mise en place, prep work, and station organization
  • Ensure all food products are properly handled, stored, labeled, and rotated in compliance with food safety standards
  • Maintain cleanliness and organization of all work areas throughout service
  • Communicate effectively with chefs and team members to ensure smooth kitchen operations
  • Monitor product quality and consistency during preparation and service
  • Assist with receiving and stocking deliveries as needed
  • Follow all company policies, sanitation procedures, and California health and safety regulations
  • Support a collaborative, respectful, and professional kitchen environment
Qualifications
  • Minimum 2 years of culinary experience in a fine dining or high-volume restaurant preferred
  • Experience working multiple stations in a professional kitchen environment
  • Strong knife skills and understanding of cooking techniques
  • Ability to work efficiently in a fast-paced setting while maintaining attention to detail
  • Flexible schedule, including mornings, evenings, weekends, and holidays
  • Ability to stand for extended periods and lift up to 50 pounds
  • Food Handler Certification required or ability to obtain upon hire
Preferred Qualifications
  • Fine dining and luxury hospitality experience
  • French cuisine experience preferred
  • Culinary degree or formal culinary training is a plus

  • Ability to stand for extended periods of time
  • Ability to lift and carry up to 50 lbs
  • Flexible schedule, including mornings, evenings, weekends, and holidays
