Job Summary:
The Busser is a key support role in the Front of House team at Blu Brasserie, ensuring smooth and efficient table turnover, cleanliness, and guest readiness in the dining room, private rooms, and reception. This role directly contributes to the overall guest experience through cleanliness, speed, and coordination with Captains, Runners, and the Bar.
Key Responsibilities:
Dining Room Support
- Assist Captains and Runners in clearing and resetting tables promptly and properly.
- Ensure tableware (glassware, flatware, plates) is removed and replaced quickly and discreetly.
- Help maintain tidy and stocked side stations (napkins, water pitchers, cutlery).
- Support wine and water service as directed.
- Monitor guest needs (refills, napkins, etc.) and report to Captains.
Cleaning and Maintenance
- Clean and sanitize tables, chairs, and booths after each use.
- Wipe down and maintain cleanliness of walls, baseboards, and service stations.
- Sweep and mop dining floor areas as needed and at end of shift.
- Clean windows, mirrors, and glass doors in the dining room and reception.
- Polish glassware and silverware as directed.
Restroom Cleaning
- Check guest restrooms at the start, during, and end of shift (every 30–60 minutes).
- Restock paper towels, soap, toilet paper, and air fresheners.
- Clean and sanitize toilets, sinks, mirrors, floors, and high-contact surfaces.
- Report any maintenance issues or inventory needs to the manager.
Reception & Lounge Area
- Maintain cleanliness of the host stand area.
- Wipe and sanitize benches, lamps, and artwork near the reception.
- Ensure the waiting area is organized, clean, and welcoming.
End of Shift Duties
- Help with full dining room clean down: tables, chairs, booths, and floors.
- Organize and restock stations with glassware, cutlery, and napkins.
- Remove trash and ensure bins are properly replaced and sanitized.
- Confirm restroom areas are fully cleaned and restocked before closing.
Job Requirements:
- Availability to work evenings Tuesday–Saturday.
- Attention to detail, speed, and consistency.
- Ability to lift trays and carry up to 30 lbs.
- Physical stamina for long periods of standing, walking, bending.
- Service-oriented attitude, teamwork skills, and interest in learning fine dining service.
- Must have or be willing to obtain Texas Food Handler Certification.
- Valid Alcohol Server Certification (TABC – Texas Alcoholic Beverage Commission).
Preferred Qualities:
- Previous experience in fine dining or casual upscale settings.
- Basic knowledge of dining room etiquette and service.
- Conversational Spanish is a plus for back-of-house coordination.
