Position Summary
The Food Preparation Specialist is responsible for food preparation, cooking, portioning, and packaging of meals. This role ensures all meals are prepared safely, efficiently, and in compliance with established recipes, dietary guidelines, and health and safety standards. The Food Preparation Specialist works under the supervision of the Food Service Manager and serves as an employment coach to participants working in the Central Kitchen, providing hands-on training, support, and feedback on their progress and skill development.
Education and Experience
- 2 years of experience in food preparation or kitchen operations
- ServSafe Food Handler Certification (must be obtained within 3 months of hire)
- Experience working with individuals with intellectual and developmental disabilities preferred
- Experience in large-scale meal preparation or institutional food service preferred
- Experience in coaching, training, or mentoring others in a work setting preferred
- Knowledge of special dietary needs and texture modifications preferred
Required Skills and Abilities
- Knowledge of federal, state, and local food safety guidelines
- Knowledge of the use and management of kitchen equipment
- Understanding of food ingredients and their impact on dietary/nutritional plans and practices
- Ability to prioritize safe food handling and kitchen safety standards
- Ability to prepare, cook, and store meals in varying quantities and with adherence to portion and dietary guidelines
- Ability to work as part of a team and contribute to shared goals
- Ability to handle multiple tasks simultaneously
Physical Requirements
- Ability to sit, stand, walk, stoop, kneel, bend, push, and pull for extended periods
- Ability to lift and carry up to 50 pounds from floor to shoulder level
- Ability to work in a kitchen environment with exposure to heat, cold, and various equipment
- Ability to stand for extended periods during food preparation and service
Essential Job Responsibilities
Food Preparation & Production
- Prepare, cook, and assemble meals according to standardized recipes and portion guidelines
- Follow all dietary specifications and restrictions accurately, including pureed, low carbohydrate, low fat, gluten-free, and other special diets
- Measure, weigh, and portion ingredients and meals according to established standards
- Package and label meals appropriately to ensure correct distribution to participants
- Operate kitchen equipment safely and efficiently, including ovens, stovetops, mixers, slicers, and food processors
- Assist with meal assembly, plating, and delivery preparation
- Monitor food quality throughout preparation and notify supervisor of any concerns
Food Safety & Sanitation
- Follow all food safety protocols, including proper handwashing, glove use, and cross-contamination prevention
- Monitor and record food temperatures during cooking, holding, and storage
- Maintain clean and sanitized work areas, equipment, and utensils throughout shift
- Follow proper food storage procedures, including FIFO (first in, first out) rotation
- Comply with all federal, state, and local health and safety regulations
- Report any food safety concerns, equipment malfunctions, or hazards immediately to supervisor
- Participate in regular cleaning schedules and deep-cleaning projects
Kitchen Operations Support
- Assist with inventory management, including receiving deliveries and organizing supplies
- Notify Food Service Manager of inventory needs and supply shortages
- Ensure temperature logs, production log counts, and prep lists are completed daily.
- Adapt to changing priorities and assist in other areas as needed
Employment Coaching & Participant Support
- Provide hands-on training and coaching to participants working in the Central Kitchen
- Demonstrate proper techniques for food preparation, kitchen safety, and equipment use
- Break down complex tasks into clear, manageable steps appropriate to individual learning styles
- Provide consistent, positive reinforcement and constructive feedback
- Document participant progress and communicate observations to Food Service Manager and employment support staff
- Document participant achievements, challenges, and skill development
- Foster an inclusive, respectful work environment that promotes independence and confidence
- Support participants in developing workplace skills including punctuality, teamwork, and communication
Professional Responsibilities
- Attend staff meetings, training sessions, and organizational events as requested
- Maintain ServSafe Food Handler certification through required training
- Follow all organizational policies, procedures, and safety protocols
- Communicate effectively with Food Service Manager, kitchen team, and other staff
- Maintain confidentiality regarding participant information and organizational matters
