Summary/Objective
The Utility Lead is responsible for the cleanliness of the Main Kitchen as well as acting as the liaison between maintenance contractors, facilities and management. Assists with the preparation of PM documents, troubleshoots issues with equipment and reports up to the Executive Chef. The Lead also works closely with the Utility workers to assign cleaning duties in their respective areas.

- Ensures that all units and equipment are maintained/ cleaned according to local & hospital required food safety standards.
- Ensures that all required regulatory logs, PM documents, temperature logs, cleaning logs etc are completed accurately and in a timely manner.
- Works with the Utility staff to ensure they are completing their daily, weekly and monthly cleaning duties and assigns special duties to them as needed.
- Keep all equipment clean and in good working order through the communication channels with the Exec Chef, Facilities and maintenance contractors. All equipment cleaned according to the manufacturers directions. Fryers emptied and cleaned as required and grease disposed of in a safe and efficient manner. Round monthly on condition of gaskets on all coolers and report up on maintenance required to ensure that refrigeration equipment is working at peak efficiency.
- Assist Executive Chef with special event as needed as well as other duties as assigned.
- Maintain a valid Texas Drivers license and drive the truck when needed for deliveries to the Satellite units.
