BASIC FUNCTIONS:

Manages the day-to-day operations of the kitchen and dietary staff in accordance with State of Minnesota Food Code Rule, Chapter 4626, Assisted Living Laws, Chapter 144G, Assisted Living Services, Chapter 144G, Reporting of Maltreatment of Minors, MN Statute Section , Reporting of Maltreatment of Vulnerable Adults, MN Statute Section and all other Minnesota Department of Health & Human Services applicable codes.

Upholds the mission statement and philosophy statement of Bay Harbor.

Supervises all aspects of the Dining Services Department.

RESPONSIBLE TO: Housing Manager

ESSENTIAL JOB FUNCTIONS: (Illustrative examples, Not All inclusive)

Creates rotating menus, seasonally, of interesting and delicious food that meets the recommended dietary allowance based on current dietary guidelines for Americans.

Is on call for staff and assumes responsibility to work in the kitchen as needed for open shifts.

Assumes primary responsibility for food preparation.

Purchases smallwares as needed for dining service including flatware and dishes, maintains proper inventory of all dining pieces.

Creates and administers training for staff.

Attends monthly Resident Meetings and discusses upcoming food choices, ideas, activities, etc.

Circulates dining room during meal service to gauge resident satisfaction with current meal being served daily.

Infuses positivity, creativity, and change into the Bay Harbor Dining Services Department.

Creates menus that will be distributed to residents at least one week in advance.

Responsible for creating/maintaining staff schedule. Is on-call for emergency staffing needs, etc.

Responsible for managing staff to include employee interviews, schedules, coaching, and termination in accordance with Bay Harbor policy and approved by Community Director.

Maintains accurate inventory control system for Dining Services Department and reports any concerns to Housing Manager.

Works within set Dietary Budget

Ensures menus are dated and kept on file for 60 days. All 3 meals are required to be recorded. Deviations from the planned menu items should be documented on the menu.

To provide special diets as ordered by resident's physician or other special dietary needs. Provide dietary staff training to complete special diets as needed.

Provides community residents with 3 meals daily, served family or restaurant style and nutritious snacks.

Maintain staff training as required.

Ensure dietary staff has completed Task Specific training before assuming job responsibilities (Dietary training).

Maintains sanitation and safety with infection control by ensuring each staff is free from open infected wounds and communicable illnesses.

Ensures staff maintains clean and safe work habits.

Maintain all foods are stored in accordance with applicable governing laws:

Foods are refrigerated at or below 40 degrees F.

Food is covered and stored in a sanitary manner.

Freezing units will be maintained at 0 degrees F or below.

Frozen foods shall be packaged, labeled and dated.

Hot foods will be held at 140 degrees F or above and cold food shall be held at 40 degrees F or below until serving.

Maintains equipment and utensils are stored in a clean manner and shall maintain all utensils and equipment in good repair.

Ensures that dishwashing is done in accordance with Standard Practices described in Minnesota Food Code.

If food borne illness is suspected, Dining Services Manager to report to Housing Manager. Suspected incidents of food borne illness are required to be reported to Local Heath Officer.

EXPERIENCE AND/OR TRAINING:

  1. High School education or equivalent.

  2. Experience in commercial kitchen management.

PHYSICAL/MENTAL REQUIREMENTS:

Lifting light objects such as appliances, etc., ranging from less than 10-25 pounds without assistance.

Occasional rearranging of furniture with assistance.

Lifting up to 50 pounds on occasion related to unloading of food deliveries and stocking shelves.

Standing and walking up to 90% of an eight-hour day to provide resident assistance.

Frequent stooping, kneeling, and crouching as required in restocking shelves.

Reaching overhead as required to obtain stock from shelves ranging from floor to 6' and to remove or replace resident items from closet shelves.

Continuous handling, fingering, and feeling as required for operating and maintaining equipment.

Ability to concentrate on moderate to fine detail with many interruptions.

Attention span necessary to attend to a task/function for 10-45 minutes relative to activity programming.

Ability to comprehend oral and written instructions.

Ability to comprehend directions and specific ideas behind actions.

Ability to comprehend inservice materials and principles as required and to understand and apply in practice, i.e., management of the typical behaviors of dementia.

Memory capable of remembering task/assignment ranging from a few hours to long periods of time.

ENVIRONMENTAL CONDITIONS:

Occasional exposure to hazardous chemicals such as disinfectants, cleanser, soap, etc., as identified by department's MSDS manual.

Occasional exposure to latex, tyvex, plastic and/or materials, which are used for personal protective equipment.

Occasional exposure to bodily injuries due to unpredictable behaviors of residents.

Occasional exposure to loud and unpleasant noises due to beepers, alarms, vacuum cleaners, etc.

Frequent exposure to radiation due to use of microwave.

Frequent exposure to electrical/mechanical hazards, i.e., electrical equipment and changing of light bulbs, etc.

Frequent exposure to burns, grease, or oil due to cooking and serving food.

OTHER QUALIFICATIONS/RESPONSIBILITIES:

Basic computer skills.

Ability and willingness to problem solve.

Ability to manage staff effectively as exhibited by flexibility, positivity, and staff retention.

Exhibits a high degree of patience and tolerance in working with people and residents of varied levels of functioning.

Ability to communicate with residents, families, friends, volunteers, staff members and collateral community resources in a pleasant manner.

Exhibits a willingness to enhance capabilities through participation in ongoing inservice opportunities as approved by Housing Manager.

Self-directed, motivated person who can follow through with responsibility as directed by the Housing Manager.

Available and willing to work beyond regular hours of work as well as weekends and holidays.
