Job description:OVERVIEW:Camp Pinnacle is seeking an Executive Chef to join our year-round team of professionals inproviding industry-leading outdoor experiences, serving children and adults from around theworld in a beautiful Western North Carolina setting. This is an alcohol free, drug free and smoke free environment.RESPONSIBILITIES:The Executive Chef will be responsible for overseeing culinary operations during our 7 monthoperating season, comprised of 4 months of wedding/events season (predominantly weekendonly work) and a 3 month summer camp season (7 days/week, 3 meals/day). The other 5months of the year are paid time off, providing an extremely flexible annual schedule. ExecutiveChef responsibilities include but are not limited to:● Supervising Kitchen Manager and 10 kitchen employees.● Greeting staff, campers and clients, providing them with basic information regarding ourfood service.● Must learn North Carolina’s health codes and adhere to these standards, whilemaintaining ServSafe cert.● Ensure kitchen staff understand and adhere to all policies and rules.● Oversee Kitchen Manager in creation/completion of daily schedules and prep list.● Must ensure that meals are prepared to quality standards and on time.● Assist with special events and their planning.● Ordering supplies: food, cleaning, etc.● Maintain records of product inventory.● Creative input of menu's for summer season and wedding/events season● Cooperate with Events Director to provide pricing quotes and menus in a timely fashionto wedding/events clients● Facilitate opening of kitchen facilities in late March/early April and closing/winterization ofkitchen facilities in late October/early Nov.REPORTS TO: Executive DirectorKNOWLEDGE, SKILLS, ABILITIES AND EXPERIENCE:Qualifications needed to perform this work:● Competencies/Knowledge – Some college preferred, 4 years kitchen managementexperience required.● Skills: Must have strong culinary skills with ability to deliver large quantity casual cuisineduring summer camp season, as well as more refined gourmet menus during wedding/events season, always at a high level of quality. Should have a good workingknowledge of all kitchen equipment and maintenance associated.Knowledge and understanding of food allergens.● Need to be willing to attend continuing education training, which might require travel.● Needs to have a good understanding of culinary terms.● Needs to have adequate knife skills to handle the prep load.● Must have a valid driver’s license.This position requires the following personal qualities:● Must be a ‘people’ person.● Inspire others through concern and compassion.● Willingness to put in long days/weeks during 3 month summer season.● Able to relate well to persons across all socio-economic levels.● Create a team-building and nurturing environment for campers and staff.● Be a visionary with their feet on the ground – which is to say they can articulate andinspire while maintaining strong organization and follow through.● Communicate well.● Demonstrate good conflict resolution and problem-solving skills.● Be able to supervise.● Be able to demonstrate proper food handling and sanitation practices.● Be able to cook enjoyable camp meals.COMPENSATION:This position is being offered at a starting annual salary of $50,000 , with a negotiable salarydistribution format of ~$6,500/month during the 7 month operating-season and $1000/monthduring the 5 month off-season. Salary : $50,000 - $60,000
