QUALIFICATIONS:

- High school diploma or equivalency.
- Culinary Arts training or institutional cooking/baking experience preferred.
- Six months to one-year related experience and/or training.
- Fluently able to read and write English.
- Experience with and knowledge of computers.
- Good physical health condition and pass a physical examination.

WORK ENVIRONMENT:

While performing the duties of this job, the employee is exposed to fumes or airborne particles, and toxic or corrosive chemicals. The noise level in the work environment is usually moderate. Work is inside (may be required to go outside occasionally). Floors may be slippery, non-slip shoes required. All work in the kitchen must be performed with appropriate hair restraint.
As required by OSHA an exposure evaluation has been done based upon a reasonably anticipated contact with blood or other potentially infectious materials that may result from the performance of employee duties. Based on the evaluation Cook has a Medium Risk for exposure.
APPEARANCE AND DRESS:

MACHINES, TOOLS, EQUIPMENT, AND WORK AIDS:
Commercial kitchen equipment/supplies (not all-inclusive), i.e. stove, oven, steamer, dish machine, fryer, supportive equipment, and other equipment, as needed.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:
- Prepare daily menu items in accordance with local, state, and federal food standards, facility and department policies, and in accordance with the planned menu, in the time allotted, to ensure that patients/residents/staff/guests receive high quality, adequate and accurate foods.
- Review menus before the preparation of food. Select food from storage and prepare them for production.
- Produce hot and cold foods according to the menu, production plans, special diets, and standardized recipes.
- Maintain production records accurately and consistently, according to Unit Director’s instruction.
- Follow correct food handling practices to prevent food-borne illness.
- Follow HACCP procedures.
- Display and serve hot and cold foods in an appropriate and attractive manner in accordance with established portion control procedures.
- Store food products and leftovers following established sanitary and safety guidelines.
- Maintain and care for department equipment.
- Follow established safety, security, and sanitation practices.
- Follow established Infection Control and Universal Precautions when performing daily tasks.
- Assist with daily scheduled cleaning duties in accordance with established policies and procedures, as directed by the Unit Director.
- Receive and appropriately respond to oral and written communications and directions.
- Work with the facility’s clinical staff as necessary and implement changes as required.
- Ensure that all food service policies and procedures are followed.
- Develop and maintain a good working rapport with all food service personnel, as well as with other departments and patients/residents within the facility, to assure that food service can be properly maintained to meet the need s of the patients/residents.
- Create and maintain an atmosphere of goodwill and a positive attitude throughout the department and facility. Maintain professional behavior.
- Participate/assist with departmental projects, as assigned.
- Attend and participate in in-service training programs within the department and facility.
- Maintain confidentiality of all pertinent patient/resident care information to assure patient/resident rights are protected.
- Identify customer requirements, seek customer feedback, and meet customer expectations on a timely basis.
- Perform other related duties as assigned or requested.
- The associate is authorized to have very limited access to resident health information as needed to provide treatment, for billing purposes or the purpose of healthcare operations.
