The Seafood Cutter is responsible for the skilled cutting, trimming, portioning, and preparation of fish and shellfish products for sale. This role requires advanced knife skills, product knowledge, and experience breaking down whole fish and seafood products according to established specifications. The Seafood Cutter works in a fast-paced processing environment and must follow all HACCP regulations and Production Standard Operating Procedures (SOPs) to ensure product quality, safety, and consistency.
Responsibilities
- Cut, fillet, trim, and portion a wide variety of fish and shellfish products to specification
- Break down whole fish and seafood products using proper cutting techniques
- Prepare seafood products for final delivery while maintaining yield and quality standards
- Package, weigh, and accurately label finished products
- Place products into designated bins and storage locations
- Follow First In, First Out (FIFO) procedures for product handling, storage, and rotation
- Inspect products to ensure compliance with quality and freshness standards
- Identify and discard seafood that does not meet quality or safety requirements
- Safely operate, clean, and sanitize knives, tools, equipment, and work areas
- Assist with loading and unloading product during receiving and production
- Maintain strict compliance with company safety policies, HACCP guidelines, and SOPs
- Work efficiently to meet daily production goals while maintaining accuracy and quality
- Support and guide processors as needed in proper handling and cutting techniques
- Previous experience as a Seafood Cutter, Fish Cutter, or equivalent role
- Strong knife skills and experience cutting and butchering seafood
- Ability to perform repetitive hand and arm motions using a variety of cutting tools
- Ability to frequently use tools while wearing insulated gloves
- Ability to work in a fast-paced, production-driven environment
- Comfort working with raw seafood, sharp tools, and heavy product
- Strong attention to detail, yield, and product presentation
- Dependable attendance and punctuality
- Ability to follow all safety, sanitation, and food handling procedures
- Ability to hear and communicate effectively in a production environment
- Manual dexterity to safely perform cutting and processing tasks
- Visual ability to identify product quality issues and safety hazards
- Ability to stand and walk for extended periods (8–10 hours)
- Ability to climb, stoop, kneel, reach, push, pull, grasp, and perform repetitive motions
- Ability to lift, push, or pull up to 50 lbs
- Refrigerated, cold, wet, and fast-paced production setting
- Regular exposure to raw seafood, sharp knives, and processing equipment
- Use of required personal protective equipment (PPE) at all times
Salary : $22 - $23
