We are currently seeking a skilled and detail-oriented Butcher to join our team as we prepare for this exciting reopening. This critical back-of-house role requires expertise in both meat and fish fabrication, a sharp eye for quality, and the ability to work efficiently in a busy, fine-dining setting. The ideal candidate will have a deep understanding of whole-animal butchery, fish breakdown, portioning, and product preservation—ensuring nothing goes to waste and every ingredient is handled with care.

Desired qualifications:
Minimum 2 years of professional experience as a butcher or fishmonger in a high-quality kitchen- Skilled in whole-animal breakdown, portion control, and yield optimization
Proficient in fish fabrication, including filleting, skinning, and pin-boning a variety of seafood
Familiarity with Italian cuisine and traditional cuts is a strong plus- Meticulous attention to cleanliness, organization, and food safety standards
- Dependable, self-motivated, and a team player
Full-time availability, including early morning and weekend shifts
