Job Description:
The Dietary Director is responsible for overseeing the day-to-day operations of the dietary department in a skilled nursing facility, ensuring that all food service and nutrition standards are met to enhance the overall health and well-being of residents. This role includes managing food preparation, meal service, and dietary compliance while fostering a team-oriented environment focused on quality care and customer satisfaction.
Key Responsibilities:
- Meal Planning & Service: Oversee the development and implementation of customized meal plans to meet the dietary needs of residents, considering individual preferences, medical conditions, and nutritional guidelines.
- Compliance & Standards: Ensure all food service operations comply with federal, state, and local regulations, including safety, sanitation, and nutritional guidelines.
- Inventory & Procurement: Manage inventory, food ordering, and supply distribution, working with authorized vendors to meet the dietary requirements for the facility. Maintain cost control and budget adherence.
- Team Leadership & Training: Hire, train, and supervise dietary staff to ensure proper food preparation, serving procedures, and overall operational efficiency. Provide ongoing coaching to ensure staff is equipped to meet the needs of residents.
- Resident Interaction: Work closely with residents and healthcare staff to ensure that dietary needs and preferences are being met, and address any concerns or feedback regarding meals or service.
- Quality Assurance: Conduct daily audits on food quality, meal delivery, and sanitation standards. Continuously evaluate meal satisfaction and adjust processes to improve service.
- Safety & Sanitation: Ensure proper sanitation practices are followed in food preparation and serving areas, in compliance with all health regulations.
- Budgeting & Financial Oversight: Review and manage dietary department budget, ensuring proper spending on food supplies while meeting quality standards. Prepare weekly and monthly reports for senior management.
- Collaborative Leadership: Attend interdisciplinary team meetings and collaborate with nursing staff, physicians, and administrators to ensure dietary services are aligned with residents' health care plans.
- Staff Development & In-Service: Lead and participate in departmental training programs and ensure staff are up-to-date on required certifications and in-services.
- Additional Duties: Perform other related duties as assigned by the Administrator to ensure efficient dietary services.
Qualifications:
- Minimum of 3 to 5 years of experience in dietary services or food service management, preferably in a healthcare or skilled nursing environment.
- Knowledge of dietary needs in a long-term care or healthcare setting, including special diets such as diabetic, low-sodium, and puree diets.
- Experience with inventory control, food ordering, and vendor relations.
- Strong leadership, supervisory, and coaching skills.
- Excellent communication skills, both verbal and written.
- ServSafe Certification (or equivalent food safety certification).
- Understanding of state and federal regulations related to dietary services in skilled nursing homes.
- Ability to manage multiple tasks and prioritize effectively.
