Position | Wholesale Bread Production Baker
Overview
The Wholesale Bread Production Baker is a production-focused role responsible for executing high-volume bread production at our wholesale production facility. This position plays a key part in maintaining product consistency, following established formulas, and ensuring efficiency across each stage of manufacturing. With a focus on early-morning operations, this role supports inventory turnover, daily output and the long-term growth of our wholesale bakery program.

Production Skills:
- Dough Preparation - Prepares and manages croissant and danish dough to exact specifications for high-volume output.
- Manage Fermentation - sourdough cold fermentation
- Shaping and Scoring - Shapes laminated pastries with precision and consistency.
- Baking - Oversees morning bake cycles; operates ovens for consistent results.
- Quality Control - Ensures uniformity and readiness for delivery staging.
- Inventory Management - Tracks depletion of legacy stock and readiness of daily production.
- Sanitation and Hygiene - Maintains high sanitation standards in the facility.
- Team Collaboration - Collaborates with delivery and packaging teams; occasional on-site support.
- Training and Supervision - Will supervise an assistant in future; currently focused on solo execution.
- Menu Development - R&D, must adapt timing and production flows and Atria aesthetic and standards.
Minimum Qualifications
- 18 years of age or older
- Minimum of 1 yr. experience in professional bread baking and pastry production
- Effective communication skills and the ability to work as a team player
- Excellent basic mathematical skills
- Must display the ethical and professional standards set forth by ATRIA
- Able to work in a standing position for long periods of time (minimum of 8 hours)
- Able to reach, bend, stoop and frequently lift up to 50 pounds or more
- Stamina and availability to work 40 hrs per week, including weekends and some of holidays.
- Possession of a current Food Handler's Card

Pay: $18.00 - $20.00 per hour
Expected hours: No more than 40 per week
