The Protein Inventory Clerk is responsible for accurately tracking, recording, and maintaining inventory of all protein materials. This position plays a key role in ensuring production accuracy, traceability, and product flow through various stages of the process. The clerk supports operations by monitoring usage, verifying consumption, and maintaining up-to-date information in the inventory management system. Work closely with cross-functional support teams and communicate concerns to management.

- Maintain accurate inventory counts and documentation for all protein.
- Verify lot numbers, quantities, and product identification to ensure full traceability and compliance.
- Daily issue protein to production team as needed according to production schedule.
- Communicate any returns needed back to cold storage to the warehouse team.
- Coordinate with production, grinding, injection, and thawing teams to confirm material movements.
- Perform daily WIP inventory counts and report discrepancies to supervisors.
- Support month-end or weekly physical inventory counts and variance reporting.
- Communicate with warehouse and production variances of protein usage and needs according to production schedules.
- Verify warehouse is following proper labeling of all protein.
- Verify production is following proper labeling of WIP material.
- Assist in maintaining proper storage and organization of protein pallets, bins, and carts in the protein cooler to prevent spoilage or contamination.
- Follow all food safety, safety, and GMP (Good Manufacturing Practice) standards at all times.
- Maintain inedible storage area.
- Use WMS or Excel to track all protein movements and/or consumption.
- Use forklift or stacker for protein movements.
- This position requires cross-training in various functions within the RAW production department to provide coverage and operational support as needed.
- Work in cold room environment. (30 – 5o degrees).
- At High School diploma or GED
- Minimum of 6months experience in manufacturing, food processing, or inventory control preferred
- Ability to perform basic math calculations and weight conversions
- Preferably bilingual English/Spanish
- Excel or WMS experience preferred
- Forklift certification
- A go-getter with a can-do attitude
- Self-motivated, articulate, detail-oriented and organized
- Ability to work effectively with multiple departments in a fast-paced production environment.
