Appellation Healdsburg is seeking a passionate and skilled Pastry Supervisor with strong experience in lamination and artisanal bread production. This role supports the daily operation of our bakery program, producing exceptional viennoiseries and breads for multiple hotel outlets (breakfast, amenities, retail, banquets). Key Responsibilities:
· Lead and execute daily lamination and viennoiserie production (croissants, danishes, seasonal pastries).
· Produce and bake artisanal breads including baguette, sourdough, brioche, and specialty loaves.
· Shape, scale, and finish doughs with consistency and accuracy.
· Monitor fermentation, proofing, and baking conditions to ensure quality.
· Maintain high standards of organization, cleanliness, and food safety.
· Assist with inventory management, ingredient rotation, and product labeling.
· Support pastry production for hotel outlets: retail pastry case, breakfast pastries, banquet amenities.
· Train and guide junior pastry/bakery staff in a positive and professional manner.
· Uphold Appellation brand standards and contribute to a culture rooted in craft and hospitality.
Qualifications:
· Minimum 3 years of professional experience in croissant/lamination and artisan bread production.
· Confident shaping baguette, sourdough, brioche, and other dough types.
· Ability to maintain consistency in a high-volume production environment.
· Strong work ethic and pride in craftsmanship—clean, organized, and detail-oriented.
· Eager to learn, take feedback, and grow within an expanding culinary organization.
· Ability to lift up to 50 lbs and work early morning shifts.
· Baking/pastry education is a plus, not required.
