We are looking for a hands-on, team-oriented leader who can support the team, build trust, and work alongside the staff in daily operations.
Responsibilities
・Prepare and present sushi, sashimi, omakase items, and daily specials according to Nobu standards
・Maintain strong knowledge of seafood, seasonal ingredients, Japanese cuisine, sake, and cooking techniques
・Ensure food safety, sanitation, and health department standards are followed by the sushi team
・Order, receive, inspect, and manage ingredients while controlling food costs
・Assign daily prep duties and prepare fish, vegetables, and cold items
・Organize sushi bar stations and lead, support, and motivate sushi staff
・Maintain cleanliness of workstations, walk-ins, and storage areas
・Conduct monthly inventory and manage labor costs within budget

Requirements
・5–10 years of culinary experience in a similar high-volume operation
・2–4 years of experience as an Executive Sushi Chef
・Strong knowledge of sushi preparation, Japanese seafood, knife skills, plating, and kitchen operations
・Understanding of food/labor cost controls, recipe yields, and measurements
・Proficiency in Microsoft Outlook, Word, and Excel
・Strong English communication, customer service, and hospitality skills
・Ability to work under pressure and travel as needed
・High school diploma or equivalent required; culinary school preferred
・Food Handler Certification required
・CPR/First Aid and multilingual skills preferred
