JOB OVERVIEW: The Bar Operations Supervisor is responsible for overseeing the daily operations of AC Lounge and Salud Pool Bar, ensuring exceptional guest service, operational excellence, inventory control, cleanliness standards, and revenue growth. This position supervises bar staff, manages beverage programs, coordinates promotions and activations, maintains inventory and supply levels, and supports the overall Food & Beverage operation. The ideal candidate is organized, creative, detail-oriented, and passionate about hospitality and beverage service.

Duties and Responsibilities:

Guest Service:

  • Oversee daily operations of AC Lounge and Salud Pool Bar.
  • Conduct daily inspections to ensure outlets are clean, organized, fully stocked, and guest ready.
  • Ensure all bartenders and service staff maintain company standards for service, appearance, and professionalism.
  • Assist during peak business periods to ensure service excellence.
  • Respond promptly to guest concerns and service recovery opportunities.
  • Monitor guest satisfaction and identify opportunities for improvement.

  Kitchen Operations & Food Quality Oversight (PM Shift):

  • Oversee evening kitchen operations, including supervision of cooks, stewards, and PM bussers (stewarding team).
  • Ensure proper staffing, productivity, and communication between the kitchen, bar, and front-of-house teams during dinner and late-night service periods.
  • Monitor food quality, presentation, consistency, and adherence to recipe and brand standards.
  • Ensure all food orders are prepared accurately and delivered within established ticket-time standards.
  • Actively manage food execution during peak periods to maintain service speed, quality, and guest satisfaction.
  • Conduct regular line checks to verify product quality, freshness, portioning, and proper food handling procedures.
  • Address kitchen performance issues promptly and provide coaching and support to culinary and stewarding team members.
  • Ensure stewarding and bussing operations maintain cleanliness, organization, and proper sanitation standards throughout the shift.
  • Partner with culinary leadership to identify opportunities for operational improvements, enhanced food quality, and increased guest satisfaction.

Inventory Control & Organization:

  • Maintain accurate inventories of liquor, beer, wine, mixers, garnishes, and operational supplies.
  • Conduct weekly liquor inventory counts and investigate discrepancies.
  • Maintain organization, cleanliness, and security of all liquor storage areas.
  • Ensure proper stock levels of LBW, china, glassware, bar tools, and operating supplies.
  • Receive, organize, and store deliveries according to company standards.
  • Follow FIFO procedures and proper product rotation practices.

 Scheduling & Payroll:

  • Prepare and manage schedules for bartenders and bar support staff.
  • Monitor staffing levels and labor costs based on business demands.
  • Review payroll records, timecards, and attendance for accuracy.
  • Coordinate staffing needs for special events, activations, and holiday periods.
  • Create and maintain seasonal beverage menus, featured cocktails, and promotional offerings.
  • Develop happy hours, activations, themed events, and revenue-generating programs.
  • Maintain POS programming, including menu updates, pricing, modifiers, and promotional items.
  • Analyze sales trends and recommend opportunities to increase revenue and profitability.
  • Partner with hotel leadership on beverage marketing initiatives and outlet promotions.

 

Menu Development & Revenue Growth:

 Training & Team Development:

  • Train bartenders and service staff on service standards, beverage knowledge, and upselling techniques.
  • Conduct ongoing coaching and performance follow-up conversations.
  • Assist with hiring, onboarding, and training new team members.
  • Foster a positive, professional, and guest-focused work environment.

 Cleanliness & Compliance:

  • Ensure bars, storage rooms, coolers, and service areas meet cleanliness and sanitation standards.
  • Conduct weekly deep-cleaning inspections and follow up on deficiencies.
  • Ensure compliance with food safety, alcohol service regulations, company policies, and Marriott standards.
  • Report maintenance issues and safety concerns promptly.

 

Marketing, Promotions & Activations:

  • Develop monthly activation calendars for AC Lounge and Salud Pool Bar.
  • Coordinate happy hours, specialty events, holiday promotions, and featured beverage programs.
  • Create innovative beverage offerings that enhance guest engagement and drive revenue.
  • Monitor performance of promotions and recommend improvements 

General:

  • Arrive on time for scheduled shifts, typically early mornings.
  • Maintain a professional appearance and demeanor.
  • Work collaboratively with other hotel staff.
  • Perform other duties as assigned by management.

 Food Quality & Execution:

  • Consistently achieve food quality standards that meet or exceed guest expectations.
  • Maintain established ticket times and service execution standards during all operating periods.
  • Ensure effective communication between kitchen, bar, and service teams to deliver a seamless guest experience.
  • Monitor and improve guest satisfaction scores related to food quality, presentation, and timeliness of service.
