World of Beer Culinary Training Manger Standards:

The Culinary Training Manager partners with the Regional Managers, Store Managers, and BOH WOBSTARs in each of their markets to oversee quality food, perfect execution, recipe compliance, distribution compliance, training, and people development. 

Duties & Responsibilities:

Oversees the quality assurance of food handling in the location:

  • Supervises oversees, and monitors all food item ticket times to ensure quality standards times are properly met.
  • Conducts formal quality line check with the management team to teach taste and temp checks .
  • Performs safety & sanitation audits to ensure that kitchen standards are maintained.
  • Understands manages, and practices safe food handling procedures (Serve safe certified).
  • Ensures that the cleanliness of the kitchen and the safety of our guests are always maintained 
  • Coaches BOH staff and management team on how to properly track waste on a daily, weekly, and monthly basis.
  • Oversees, monitors, and enforces sanitation and compliance for each location in his/her markets to ensure adherence to safety and sanitation standards, as well as adherence to Company recipes.
  • Evaluates and provides feedback on restaurant adherence to safety and sanitation standards by conducting BOH quality evaluations.
  • Coaches and trains managers on proper handling, maintenance, and storage of all food and equipment items in each location.
  • Supervises, coaches, and oversees BOH staff in the production and preparation of food.
  • Coaches, trains, and supervises BOH WOBSTARs and management to improve efficient and effective food item ticket times, improve food production, and help ensure recipe adherence.
  • Coaches staff on how to properly maintain equipment and educate staff on equipment cleaning procedures.
  • Certifies BOH security measures are enforced in each location.

Develops Managers (General Managers, Assistant Managers, Kitchen Managers, and Assistant Kitchen Managers):

  • Conducts regional meetings with BOH management teams to provide guidance and oversight on food and kitchen labor and supply cost issues.
  • Inspires managers to manage and oversee the delivery of food at the pace and effectiveness to meet or exceed operational standards for quality food.
  • Coaches managers through production/preparation of food, safety and sanitation standards, and recipe adherence.
  • Coaches the management team on how to properly handle product complaints.
  • Assists operators in maintaining a safe, fun, and clean work environment for the staff.
  • Identifies and elevates performance issues to upper management.

Works with R&D:

  • Assist with Food Tastings & Food R&D.
  • Assist with Kitchen Manager Meetings, KM webinars, KM Conference Calls.
  • Assist WOBF with offsite catering events.
  • Works with the Director of Culinary to Fine-tune Fusionprep.

Qualifications:

  • A minimum of 5 years of experience in a Kitchen Management Leadership role.
  • Strong leadership & teaching skills
  • Willingness to always enforce food spec and standards.
  • Strong Computer Skills; proficient in Excel, Word, and Outlook.
  • Possess strong organizational and decision-making skills.
  • Work well in a fast-paced setting, while maintaining a fun, high-energy work environment.
  • Must be able to communicate clearly and effectively.
  • Manager Food Handler Certification (complying with all local requirements)

Work Requirements

  • Be able to reach, bend, stoop, and frequently lift up to 50 pounds. 
  • Be able to work in a standing position for long periods of time.
  • Must have exceptional hygiene and grooming habits.
  • Ability to retain menu recipe knowledge
  • Flexible schedule that can accommodate the needs of the WOBF
  • Willing to Travel
