Purpose of Position:
Supervise the Food & Beverage team to ensure department standards are met in regard to food safety, food quality, presentation, and safe working environment. Support Executive Chef to develop team towards continuous innovation and productivity throughout Food & Beverage operations.
Job Responsibilities and Duties:
• Manage, lead, and monitor the daily production of Food & Beverage operations. Consistently enforce and uphold all Casino and Food & Beverage Policies and Procedures and ensure quality standards and processes are met.
• Oversee one or more of the property’s restaurant outlets and assist in any special events or product preparation.
• Maintain appropriate staffing levels to business needs and administer and update schedules.
• Plan and develop menus by testing new products and recipes in conjunction with the Executive Chef.
• Conduct and monitor standard operation training for kitchen personnel, including sanitation and food production.
• Assist in the calculation of food costs for restaurant menus, maintain cost control records, and review food and labor costs with the Executive Chef and Director of Food & Beverage.
• Perform administrative duties such as assisting with interviews, performance evaluations, disciplinary actions, memos, documents and reports.
• Prepare inventories, requisition supplies, track delivered products and ensure proper billing of items.
• Perform other duties as assigned.
Education/Experience:
• AA or Culinary Arts degree from an accredited institution and at least 4 years of experience in culinary team leadership role.
• Working knowledge of baking, cake production, garde manger, fine dining, and production cooking techniques.
• ServSafe manager certification and HAACP knowledge is required.
• Excellent interpersonal, guest service, leadership, communication (verbal and written), inventory control, computer literacy, and problem solving skills are required.
• Demonstrated ability to analyze P&L statements and understand cost control methods.
Must be able to work Nights, Weekends, and Holidays
