Description
The Head Chef performs a variety of kitchen duties required to prepare and serve two to three meals each day of the week based on guidelines mutually agreed upon by Okoboji Summer Theatre and chef.
Chefs provide buffet style meals from a state of the art facility for Okoboji Summer Theatre company including professionals and students. Meals provided during two weeks of Pre-Season and an eight-week production season.
The Head Chef will receive two complimentary tickets to each of the seven shows and two children’s theatre shows.
This position is seasonal, full-time, from late May to mid-August 2023, and will be approximately 40 hours per week.
Meal schedule: OST strives to provide company members with three well-balanced, healthy meals per day.
Monday through Friday: breakfast: 8:30 am to 8:50am; lunch: 1:00pm to 1:20pm; dinner: 6:00pm to 6:20pm.
Saturday: breakfast: 8:30am to 8:50am; lunch: 2:30pm to 2:50pm; dinner: between the two Saturday shows.
Sunday: no prepared breakfast; brunch: 11:00am to 11:20am; dinner: 4:00pm to 4:50pm. A sandwich meal is prepped & stored for a post-strike meal.
Duties:
- Include daily preparing and serving food and beverages for 75 – 85 company members that will include vegetarians.
- Responsible for ordering food, ensuring cleanliness and best practices are followed
- Assists in finding and hiring Assistant Chef
- Supervising kitchen staff and assisting student cleanup crews.
- Responsible for the set up and organization of kitchen and dining room area prior to start of food service beginning
- Responsible for the cleaning and closing down of kitchen and dining room area after end of summer season
- Responsible for working with Director of Production in managing food budget
- Has understanding and knowledge to safely use and maintain kitchen equipment.
- Responsible for cleaning, sanitation and organization of kitchen, walk-in coolers, dining room, and all storage areas.
- Establishes a positive work environment.
- Keeps a very clean and organized kitchen at all times
- Obtain food handling license if required

Requirements
Knowledge, skills & abilities:
- Minimum two years of food preparation experience
- Knowledge and experience in meal planning and food service built on fresh foods and home-baked products
- Willingness to work weekend and holidays as required and to maintain a flexible schedule in order to meet the needs of the position.
- Must have good attendance and proven record of good work performance
- Ability to remain calm under pressure and in unexpected situations.
- Positive attitude
- Must be capable of working with Assistant Chef and student cleaning crews.
- Strong communications skills with both adults and students
Salary : $30,900 - $39,100
