Job Title: Sous Chef: Pastry

Job Status: Year Round 10 Months

Compensation and Benefits:

  • Compensation: Proposed hiring rate of $1,923.08 to $2,050.00 biweekly amount, actual pay will be adjusted based on experience.
  • Benefits: This position is eligible to enroll in company subsidized medical, dental, vision, flexible spending, HSA, life/disability options; season pass for employees/dependents and privileges at several other resorts. Several discount programs (i.e. food & beverage, retail/rental, tickets, etc.) also available.

Job Summary:

The Pastry Sous Chef supports the Chef in the planning, preparation, production, and control of all Bake Shop operations. This individual is career oriented, creative, passionate, and is a culinary leader with general leadership qualities, who is able to work unsupervised and manage the Bake Shop in the Pastry Chefs absence. This person is either a graduate of a two year culinary/pastry program with quality experience or has at least five years' experience in a quality establishment or production bake shop.

Essential Duties and Responsibilities:

  • Adheres to Copper Culinary Guidelines
  • ServSafe Certified
  • Understands the importance of standards, speed, and quality; educates and holds staff accountable for same standards
  • Prepares pastries to the specification of the Pastry Chef
  • Proficient in cake decorating.
  • Oversees and prepare food items according to designated recipes and quality standards
  • Takes responsibility for the quality of products
  • Responsible for hiring, supervising, training, and motivating lower level pastry cooks to work more efficiently and clean
  • Development of new and exciting pastries and desserts and other menu items for banquets, restaurants, food courts, and coffee shops; creation of shop protocols and processes
  • Food Ordering
  • Scheduling
  • Demonstrates team work
  • Maintain a clean and orderly bake shop and adhere to health and safety standards; implements procedures for staff to follow
  • Prepare a wide variety of goods such as cakes, bars, cookies, breakfast pastries, plated desserts, pizza dough, breads, pasties, etc.
  • Support restaurants with breads and desserts
  • Influences, and supports rebranding of outlets and new concepts.

Guest Service Duties: Assist with special request of guest and outlet chefs/managers, including gluten free, vegan, and special dietary request

Other Duties as Assigned:
