| Position Summary |
The Head Cook is responsible for the preparation of food for patients, elders and staff, maintaining quality food production and portion control. The incumbent supervises and instructs Assistant Cooks and Dietary Assistants with food preparation.
Primary Responsibilities
All employees of St. Martin’s in the Pines are expected to maintain strict confidentiality, ensure compliance with policies and procedures, and uphold the safety and well-being of our residents. Employees are expected to demonstrate an appreciation of the heritage, values, and wisdom of the residents as well as the aging process. In particular, the Head Cook:
- Prepares and supervises the preparation of all foods on menu provided for elders and staff using standardized recipes based on standard portions
- Supervises and instructs assistant cooks and dietary aides involved in food preparation, clean up, and other routine requirements
- Estimates food requirements and controls serving portions, eliminating waste and utilizing leftovers
- maintains sanitation and safety of equipment and cooking area, reporting equipment in need of repair to the Director of Food Services
- If working the morning shift, opens kitchen and turns on necessary appliances to prepare breakfast; if working the evening shift, closes kitchen and makes sure all equipment is turned off and all doors in kitchen are locked including the walk-in cooler and refrigerator
Secondary Responsibilities:
- Attends all meetings and in-services as required by the Director of Food Services
- Other duties as assigned

- High School or equivalent
- Course work in food preparation desirable
- Experience in a position requiring strong organizational skills and the ability to work independently
- Food handling certification required

Work hours are full-time and scheduled in shifts by the Directory of Dietary Services

Lifting up to 25 pounds; frequent bending
