REPORTS TO: Executive Chef

SUPERVISES: Kitchen Staff

DEPARTMENT: Food And Beverage

AGE REQUIREMENT: 21 Years Or Older

WORKING HOURS: This is a salaried exempt position. The incumbent is expected to work the necessary hours to meet the needs of a 24 hour establishment.

SUMMARY: The Sous Chef is responsible for preparing all menu and buffet items in the hot and cold kitchen; Creates specialty menus and buffet menu rotation schedules; Oversees all activity in the kitchen to ensure efficiency, safety and accuracy; Provides assistance to the Executive Chef to ensure that products needed for all menus are available; Carries out hands-on food preparation in addition to supervisory / management responsibilities. This position must be Serv-Safe certified.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  1. Provides management and support to all kitchen personnel.
  2. Ensures that all food served is prepared properly and meets set quality standards.
  3. Follows all applicable safety and maintenance procedures specified for kitchen and food service areas.
  4. Ensures that all kitchen preparation work is completed by the specified time.
  5. Fulfills full management responsibility for the kitchen in the Executive Chef's absence.
  6. Prepares special orders when requested.
  7. Reviews delivered product and ensures proper storage.
  8. Checks food preparation procedures for quality, consistency and accuracy.
  9. Directs and instructs kitchen staff in their individual tasks.
  10. Trains and supervises kitchen staff on recipe procedures, preparation and cleaning duties.
  11. Maintains cleanliness standards of work area and equipment.
  12. Acts as a role model and always present oneself as a credit to River Rock Casino and encourages others to do the same.
  13. Meets the attendance guidelines of the job and adheres to regulatory, department and company policies and procedures.
  14. Attends all required meetings and training.
  15. Maintains confidentiality at all times.
  16. Performs other duties as assigned.

SUPERVISORY RESPONSIBILITIES: Carries out supervisory responsibilities in accordance with policies. Responsibilities include assisting with FOH tasks, end of month inventory, positive leadership planning, assigning and directing work, appraising performance, reward and disciple of employees, addressing complaints and resolving problems.

QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and ability required.

  1. Minimum of five (5) years of culinary experience at a high volume establishment.
  2. Minimum of two (2) years supervisory experience in a high volume culinary operation.
  3. Specific current experience in three or more of the following areas is required: buffet set up and menu planning, Asian quick service wok cooking, and a la carte line cooking, ordering and inventory, team member dining, pizza production, catering and banquets, baking and pastry.
  4. Must be ServSafe certified or be able to obtain a ServSafe certification within 6 months of employment.
  5. Possess excellent knife skills and be able to operate basic kitchen equipment.
  6. Ability to perform basic computer tasks on Microsoft Office (i.e. Word and Excel).
  7. Proven self-starter requiring minimal direction and follow-up.
  8. Prior experience managing a large kitchen staff (25 individuals).
  9. Must have leadership qualities; ability to cross train other team members.
  10. Knowledge and understanding of financial criterion for the Kitchen function in the department including daily food cost tracking, forecasting and scheduling by productivity standards.
  11. Demonstrated ability to manage multiple tasks and priorities.
  12. Proven leadership and supervisory skills including fair hiring practices, documentation and progressive disciplinary action skills. Strong interpersonal skills. Must present a professional appearance and in uniform at all times.
  13. Must be able to maintain a high degree of confidentiality with respect to all matters pertaining to the gaming enterprise business.

EDUCATION:

  1. High School Diploma or equivalent GED required.
  2. Specialized culinary training preferred.

LANGUAGE SKILLS:

  1. Must be able to read, write, speak and understand English. Bilingual skills preferred.
  2. Excellent communication skills are important to the successful conduct of this position.
  3. Must be able to speak with the public in a professional manner.

MATHEMATICAL SKILLS:

  1. Ability to add, subtract, multiply, and divide in all units of measure as related to the position.

REASONING ABILITY:

  1. Ability to proactively streamline processes for company's return on investment.
  2. Ability to define problems, collect data, establish facts, and draw valid conclusions.
  3. Ability to interpret an extensive variety of instructions furnished in written, oral, diagram or schedule form.

  5. Ability to apply regulatory and procedure doctrine, concepts, and policy to practical situations.

PHYSICAL DEMANDS:

  1. Must be able to be on feet for prolonged periods of time and work efficiently in an environment with extreme temperatures (hot/cold);
  2. Must possess coordination and dexterity to use kitchen utensils such as knives, spatulas, food tongs, etc.
  3. Must be able to operate the following kitchen equipment: stoves, grills, fryers, and other utensils when preparing food orders.
  4. Must be able to lift a minimum of fifty (50) pounds.
  5. Must be able to carry, pull and push the weight needed to perform the duties of the job.
  6. Must be able to sit and/or stand for extended periods of time.
  7. Must be able to respond to visual and aural cues.
