Potawatomi Bingo Casino is Hiring an Utility Steward Supervisor Near Milwaukee, WI

Pay based on experience | Requires flexibility to work various shifts

In this fast-paced, high energy environment where cleanliness and attention to detail is essential, how do we ensure our back-of-house kitchens are kept fully-functional for service? As a Utility Steward Supervisor, you will lead by assigning work, enforcing safety standards, and ensuring cleanliness in all back-of-house venues. While carrying out the job duties listed below, you will contribute to our continued success by demonstrating unsurpassed guest service, a high level of integrity and ethical standards, and personal and professional dedication to our mission, vision, and values.

Principal Duties and Responsibilities (*Essential Functions)

  • Ensure proper efficiency, service and operations of back of house stewarding areas, to include but not limited to sorting, disposal and removal of trash; cleanliness of all work areas; and ensuring all dishes and items are properly cleaned, sanitized, sorted and distributed to appropriate outlets.
  • Work directly with the Assistant Executive Steward and indirectly with the Executive Sous Chef and Venue Chefs to monitor business demands and needs of each venue to ensure proper stewarding needs are met. Makes decisions in Assistant Executive Steward’s absence.
  • Ensure maintenance of work space including but not limited to the dishwashing machine; proper use and application of chemicals and mechanical cleaning equipment; proper operation of trash compactor and proper trash disposal occur.
  • Delegate dishwashing, pot washing, organization needs and all cleaning responsibilities to Utility Steward Team.
  • Ensure all garbage receptacles are washed, cleaned and sanitized daily.
  • Check activity in dish room to include but not limited to checking operating temperatures and ensure that dishes, glassware and silverware are clean and sanitary.
  • Carry out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include training team members on policies and procedures; planning, assigning and directing work; appraising performance; rewarding and disciplining team members; addressing complaints and resolving problems.
  • Ensure that all team members get scheduled breaks.
  • Conduct pre-shift meetings with stewarding team members.
  • Assist in maintaining a safe working environment.
  • Allocate staff to Food and Beverage venues as business demands and assist where necessary to ensure optimum operations.
  • Ensure full compliance with departmental Internal Controls, policies, procedures and regulations.
  • Perform other duties as assigned.

Job Qualifications

  • High School Diploma or equivalency, preferred.
  • One (1) year of prior stewarding or back of house restaurant experience in a high volume environment required, such as a hotel, casino, multiple venue or resort setting; two (2) years preferred.
  • Six (6) months supervisory experience preferred.
  • Successfully complete Serve Safe certification within 3 months of hire.
  • Fully competent in operating and training on all Food and Beverage equipment.
  • Safely operate all equipment used in the Food and Beverage department.
  • Ability to work independently with minimal supervision.
  • Maintain knowledge of cleaning chemicals and proper safe usage.
  • Ability to speak effectively to team members and guests of the organization.
  • Ability to promote and participate in a strong team effort.
  • Ability to maintain organization, meet deadlines and possess integrity.
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions and procedure manuals.
  • Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions.
  • Ability to work irregular hours and extended shifts including late nights, early mornings, weekends and holidays.
  • While performing the duties of this job, the team member is regularly required to use hand to finger, handle or feel objects, reach with hands and arms; talk and hear; and use tools or controls. The team member is required to stand and walk for long periods of time. The team member is occasionally required to reach with hands and arms. The team member must frequently lift and /or move up to fifty (50) pounds with assistance.
  • Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and the ability to adjust focus.

Working Conditions

The noise level in the work environment is usually moderate to loud. When on the casino floor the noise level increases and it is not smoke free.
