Job Description

Omni Tempe Hotel at ASU is seeking an innovative and experienced Executive Chef to join the pre-opening team of our brand-new upscale hotel. Opening in the spring of 2023, Omni Tempe Hotel at ASU will provide Tempe with 36,000 square feet of event space and four new food and beverage outlets. Featuring a rooftop upscale restaurant and the largest ballroom in the area, we expect to provide tremendous options to our guests for dining, events, and entertainment.

So where does the Executive Chef fit in? This role, budgeted to start 2/1/23, will be tasked with building an award-winning culinary program that gives our guests one-of-a-kind experiences. Working closely with the Director of Food and Beverage and Director of Banquets, we expect that our chosen individual will be instrumental in building the best culinary team in the area. As a hotel, we are focused on creating stellar menus with local flare.

The Executive Chef will lead the culinary programs and kitchens for all outlets and banquets in accordance with Omni standards. Our chosen candidate must have outstanding verbal and written communication skills and possess the ability to train, develop, and motivate associates at all levels. Responsibilities

  • Ensure guest satisfaction with smooth and effective management of all day-to-day kitchen operations.
  • Build a stellar culinary team, with ample trust, a vibrant and accepting culture, and effective communication.
  • In conjunction with the Director of Food and Beverage, plan and implement menu design, creating suitable dishes and creating cost estimates, standards, and recipes for the department.
  • Collaborate with other department leaders on the market potential for food outlets relating to the local trends, market competitors, and the availability of products.
  • Partner with the Director of Food and Beverage to identify and execute capital expenditures for the food and beverage department.
  • Assist the Director of Food and Beverage with forecasting and budgeting all food costs and staffing needs, and then managing the respective budgets throughout the course of the year.
  • Work closely with the purchasing manager and Director of Food and Beverage to establish and maintain control of the standards for purchasing and receiving items.
  • Frequently test and evaluate products for quality, paying particular attention to yield/holding qualities/market price/wastage usage of leftovers.
  • Control requisitioning of food quantities, by forecasting volume, to achieve maximum profitability by avoiding over/under production.
  • Maintain an up-to-date knowledge of local and international market trends in order to create food products which satisfy guest needs, thereby maximizing sales opportunities in food outlets.
  • Maintain an up-to-date knowledge of competitors food production/offering.
  • Develop new recipes and production methods.
  • Partner with Director of Banquets to create and compile new banquet menus as required.
  • Constantly inspect all food service sections during service time to ensure that the correct standards are maintained.
  • Responsible for oversight and safe use of all equipment, as well as scheduling maintenance as required.
  • Assist in the promotion of in-house sales activities, such as culinary festivals, chef specialties and culinary competitions.
  • Manage the efficient and effective utilization of all food production staff, especially in scheduling and controlling overtime.
  • Execute the training/development of all kitchen staff by ensuring that effective on and off the job training is carried out.
  • Be vigilant of state legislation in employment and industrial relations.
  • Establish effective and efficient office procedures in handling daily menus/banquet menus/purchase requirements/general correspondence/filing and records.
  • Perform all duties applicable to a department manager within the hotel.
  • Conduct/attend all required department meetings.

Qualifications

  • Bachelor’s degree and/or culinary equivalent is strongly desired.
  • 5 years of experience as an Executive Chef or equivalent.
  • Excellent knowledge of current upscale culinary trends.
  • Must have experience in high volume hotel business.
  • Must be competent in culinary creativity as demonstrated by cooking test.
  • Experience managing food cost and inventories.
  • Possesses the ability to handle stressful and busy hotel with concurrent banquets and multiple outlets.
  • Strong working knowledge of Microsoft Office products.
  • Clear, concise written and verbal communication skills.
  • Must be comfortable to speak to guests and customers.
  • Enjoyment in building others by being an effective leader and mentor.
  • Must be willing to work evenings, weekends, and holidays when necessary.
  • Ability to work in a variety of settings, including sedentary seated computer work, standing for periods of time, and walking the property, and occasionally conducting work that includes lifting and moving objects of up to 50 pounds.

*This position is a full-time, on-site position with no work from home flexibility.
