Overview

The Concessions Manager is responsible for the effective management of venue concessions operations, including inventory controls, product ordering, cash controls, compliance with alcohol service policies, cleaning, safety, guest service, employee/volunteer training and supervision, warehouse stocking and oversight, troubleshooting, closing duties, event planning support, food preparation, production, stand stocking any other tasks assigned by the DFB. The Concessions Manager must provide a high level of event oversight and operational/personnel support to ensure smooth operation.

Responsibilities

ESSENTIAL JOB FUNCTIONS:

  • Staffing
    • Ensure concessions staff and volunteers are aware of workplace expectations; provide ongoing assistance, training, developing, and mentoring to staff and volunteers; promote a positive, enthusiastic and cooperative workplace environment by working side-by-side with staff and volunteers; reinforce property procedures and best practices through repetition; lead by example and provide on-going constructive feedback.
    • Responsible for managing, scheduling, supervising, and payroll of part-time concessions employees.
    • Provide direction and oversight to concession cashiers, concession cooks, and non-profit organizations.
  • Concession Operations
    • Manage and run all venue concessions operations before, during, and after the event. Duties include staff scheduling, employee check-in, equipment inspection, POS monitoring and troubleshooting, guest complaint resolution, training, food production, stand stocking, clean-up, post-event reconciliation and reporting, and any other duties as assigned by the Director of Finance/General Manager.
    • Oversees overall operation of the venue concession stands, portable bars, portable stands, and portable merchandise stand.
    • Responsible for observing and testing foods to ensure proper cooking.
    • Responsible for promptly providing high-quality, fresh food products for delivery to guests.
    • Coordinates the storage, tracks, and schedules maintenance and repairs of all concessions equipment, including the Ansul system, to ensure operational readiness.
    • Develops and maintains cleaning and food logs, menus, and procedures manual for Concession operations.
    • Conducts regular inspections to ensure cleanliness and maintenance meet company and venue standards.
    • Maintains sanitation, health, and safety standards and training in work areas.
    • Cover any open position to ensure the location is fully operational and company standards about the speed of service and guest satisfaction are met; assist with Premium Services operations and event needs, as directed by the Director of Concessions.
    • Complete post-event evaluations, data compilation, tracking of monetary and product shortages, generating reports; serves as a resource for POS applications and training
    • Achieve and exceed financial, operational, guest service, and associate metric goals.
    • Responsible for POS equipment, maintaining system, reviewing system upgrades (and updating training materials), testing new software/updates, routine maintenance, and troubleshooting of POS system.
    • Direct daily interaction with the venue management team and staff.
    • Participates as a team player with specific responsibilities related to preparation, excellent service, and product delivery.
  • Event Day Operations
    • Ensure proper set-up of all concession locations before doors. Set-up duties may include: stocking the stands, verifying opening inventory, and assigning duties to concession workers (employee/volunteer).
    • Responsible for completing and updating administrative paperwork associated with events – diagrams, timelines, and side-work assignments.

Qualifications

  • Nationally recognized food service sanitation training course certification preferred.
  • 3-5 years of experience in food prep or consessions
  • Nationally recognized alcohol service training course certification preferred.
  • Solid working knowledge of computer applications; Microsoft Office, POS systems, and timekeeping systems.
  • Experience training new employees and volunteers, as well as the ability to supervise the work of others.
  • Professional appearance and presentation required.
  • Excellent organizational and strong oral and written communication skills are required.
  • Ability to speak, read and write in English.
  • Ability to be detail-oriented, multi-task, and prioritize in a continuously changing environment.
  • Ability to work well in a team-oriented, fast-paced, event-driven environment.
  • Ability to communicate effectively with employees, co-workers, volunteers, management staff, and guests in a clear, business-like, and respectful manner that focuses on generating a positive, enthusiastic and cooperative work environment.
  • Advanced knowledge of inventory procedures and controls.
  • Ability to calculate basic math.
  • Ability to consistently adhere to the highest standards of integrity, professionalism, ethics, and confidentiality.
  • Strong attention to detail and ability to create and maintain precise timelines.
  • Capable of working a flexible schedule and extended hours, including but not limited to working early mornings, nights, weekends, and holidays in addition to traditional business hours.
  • Must have a valid driver’s license and vehicle.
