**Pastry Sous-Chef | Pastry Production**

178 Bruckner Blvd., 178 Bruckner Blvd., Bronx, New York, United States of America Req #803 Tuesday, March 1, 2022 **Basic Job Function:**

The Pastry Sous Chef will serve as a primary resource for the pastry team in a state-of-the-art production facility (in partnership with the Pastry Executive Chef), help execute the highest quality of pastries to serve our customers in all stores. The Pastry Sous Chef is responsible for holding the team to Maison Kayser standards and specifications in accordance with the daily production requirements. The position also manages the performance of all employees in making sure they meet the expected production level while also promoting a motivating and positive work environment.

**Task/Responsibilities:**

* Manage day to day operations while monitoring the team is performing duties to fill the daily pastry production needs

* Maintain a high-quality level of motivation and team spirit while supervising up to 20 employees

* Communicate effectively to the pastry team regarding all production needs, production levels, and any other policies related to their employment

* Be aware of new items to add to the production sheets for preparation as well as training the team on the new items

* Ensure that all perishable items are stored quickly and efficiently to avoid unnecessary waste

* Provide adequate training to the pastry staff in a timely fashion to minimize any injuries while working

* Informing the Pastry Executive Chef of any maintenance needs

* Responsible for quality control of all ingredients and finished products while providing solutions to issues

* Comply with and fully understand the laws and regulations regarding food safety, health and safety, hygiene, and sanitation

**Minimum Requirements:**

* Ability to lead and mentor a team

* Be able to work in a standing position for long periods of time (up to 8 hours)

* Availability to work shifts of 7am or 6pm, weekend and holidays

* Strong organizational and decision-making skills, along with the ability to recognize what needs to be prioritized

* Must be able to lift and carry up to 40lbs and must be able to push or pull up to 150lbs during the shift

* Ability to maintain regular, punctual attendance consistent with the ADA, FMLA, and other federal, state, and local standards

**Experience and Education:**

* 5-10 years of experience in high-volume pastry production or similar environment

* French pastry experience strongly preferred

* Professional Pastry Degree (4 years or more) strongly preferred

* Knowledge and Experience in all aspects of high-volume pastry production
