New York, NY, USA Req #472 Tuesday, March 1, 2022 **Basic Job Function:**

The Cook position is the foundation of Maison Kayser's kitchens. It involves the detailed production, maintenance and organization of all ticketed items by executing the daily tasks that are necessary to prepare all the dishes offered within our cafes. Each Cook must do their part to uphold all health and safety standards for storage of all tempered and dated materials and communicate fluently with the Head Chef and Expediting Team.

**Task/Responsibilities:**

* Follow the directions of the Head Chef at all times and execute all of the responsibilities of assigned station to the best of your ability

* Liaise with all kitchen staff within the area to ensure a correct and professional operation is conducted

* Ensure all advanced food prep is completed conforming to set standards and recipe and adhere to the portion-control and garnish requirements as instructed

* Uses proper tools that are available to ensure adherence to recipes such as measuring cups, job aides, and various kitchen equipment such as knives, mandolins, rice cooker, microwaves, hot plates, and salamanders

* Maintain awareness of ticket-time standards and ensure that expectations are met at all times

* Comply with and fully understand the laws and regulations regarding licensing, food safety, health & safety, fire equipment, and fire training

* Ensure that all perishable items are stored quickly and efficiently thus avoiding unnecessary quantities being held within the kitchen areas; always utilize all materials in an effort to ensure minimal wastage

* Label, date, and rotate items stored in all kitchens according to FIFO

* Continually monitor that your working area is fully clean and in accordance with health department standards & cleaning checklists

* Immediately report safety issues, accidents or damaged/faulty equipment to a senior team member

* Be aware of new menus and daily specials

* Additional duties/projects as directed by Store Management

**Minimum Requirements:**

* 1 year of experience cooking in a comparable professional food concept and kitchen environment preferred.

* Previous exposure to high pressure situations and a demonstrated ability to communicate needs and progress/status during rush periods

* Must be able to lift and carry up to 25lbs.

* Be able to work in a standing position for long periods of time (up to 6 hours)

* Ability to work in or around areas of extreme heat (ovens) and cold (walk-in freezers)

* Strong interest in food and restaurant operations: previous experience in a kitchen/BOH environment is strongly preferred, but not required for the right candidate

* Must have a "can do" work ethic and the ability to handle a fast-paced environment

**Experience and Education:**

* High School diploma or equivalent preferred

* Previous high-volume experience and a demonstrated ability to communicate needs and progress/status during rush periods

* Bilingual Spanish/English Strongly preferred

* Previous exposure to high pressure situations and a demonstrated ability to communicate needs and progress/status during rush periods
