ONE WORLD OBSERVATORY

Positioned at the top of One World Trade Center—the tallest building in the Western Hemisphere—on levels 100, 101, and 102, One World Observatory provides guests with unique, panoramic views of New York City, its most iconic sites, and surrounding waters from 1,250 feet. A customized guest experience complements the seemingly endless views—evoking feelings of the City’s signature pride, hope and determination (including special interactive experiences and dining options, plus a sit-down restaurant). In 2016, One World Observatory received awards and recognition from the Concierge Choice Awards (Winner: Tourist Attraction), Themed Entertainment Association (Thea Awards for Outstanding Achievement), TripAdvisor (Top U.S. Trending Summer Attraction), and Lonely Planet (Favorite Online Listing).

THE ROLE

The Banquet Sous Chef is responsible for directing and executing day to day, preparation, production, and control of all banquets culinary operations for Aspire and Well& Events, our event space(s) at One World Observatory. Furthermore, the Banquet Sous-Chef must exhibit culinary talents by personally performing task while mentoring/coaching staff and managing Banquet/Catering related functions. The successful candidate will work continually with management on improving guest and associate satisfaction. Additionally, they will manage all OWO Culinary areas to ensure consistently, high-quality products are produced and ensure all sanitation guidelines are adhered to.

Banquet Sous Chef will report to the Executive Chef.

ESSENTIAL FUNCTIONS

  • FLEXIBILITY to work extended hours due to business needs (including late nights, weekends, and holidays).
  • Work directly with the Executive Chef and Executive Sous Chef on food production and seasonal menu development.
  • Partner with the Executive Chef on the enforcement of all departmental and organizational policies and procedures; ensures staff compliance with all standards, policies, and procedures.
  • Attend pre-shift meetings with kitchen staff and review all information pertinent to daily operation and perform daily uniform checks with staff and help to maintain standards.
  • Attend pre-function meetings with kitchen and management staff and review all information pertinent to events.
  • Assist the Executive Chef in maintaining the highest possible rating from the Department of Health.
  • Assist in preparing schedules and ensuring that the culinary team is properly staffed.
  • Assist with the training, safety, sanitation, and accident prevention controls within the kitchen.
  • Troubleshoot situations that may arise during events to ensure guest satisfaction.
  • Work directly with Purchasing Managers to ensure all par levels and inventories are on hand.
  • Utilize EO’s and menus to effectively identify purchasing and/or requisition needs.
  • Utilize event calendar, Tripleseat software, and work with catering team to ensure timely event execution.
  • Help to develop and test recipes as well as techniques for food preparation and presentation to ensure high quality.
  • Contribute to the creation of menu specifications for all food items.
  • Detail menu selections, major ingredients, appearance, texture, quality standards, garnish, and method of presentation.
  • Ensure high and consistent food quality in both preparation and presentation.
  • Ensure the maintenance of kitchen equipment and report and document hazardous conditions or unsafe practices within the work environment.
  • Interact with vendors, engineering, and maintenance teams with respect to exceeding internal and external guest expectations.
  • Maintain DOH and Legends standards of kitchen and culinary storage locations.
  • Establish and maintain an open collaborative relationship with associates, solicit associate feedback, foster, and maintain an “open-door” policy.
  • Address any associate issues/concerns and report to Executive Chef and/or HR Manager.
  • Practice safe work habits, follow all safety policies, procedures, regulations, and company-wide safety training.
  • Ensure all closing duties for kitchen are completed.
  • Other duties as assigned by Executive Chef / Banquet Chef including but not limited to assisting in other Food and Beverage Outlets when operationally necessary.

QUALIFICATIONS

To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.

  • Must be at least 18 years of age.
  • Must have a minimum of five (5) years’ experience in a high-volume catering/private events operation leading a staff of five (5) or more associates.
  • Ability to read, speak and write in English, and possess a good command of the English language—overall. Additionally, the ability to prioritize and manage time effectively is indispensable.
  • Must be knowledgeable on Microsoft Office Suite and procurement software.
  • Excellent leadership, team building, and communication/customer service skills.
  • Ability to lift and transport food and other items weighing up to 50 pounds coupled with the ability to stand/walk for long periods of time displaying sufficient mobility to perform tasks including reaching, bending, stooping, wiping, pushing, and pulling.
  • Ability to support all venue catering, on-/off-site events, and be willing to provide short-term support to other Legends’ venues.
  • People and product focused with a hands-on leadership-style.
