  1. ROLE OVERVIEW and PURPOSE

Chef will oversee meal selection, preparation, service, and clean-up of food services for elderly participants in PACE. This role will ensure overall food quality assurance for participants. Additionally, this role will support the food services team to ensure adequate supplies of food are available for participants with special dietary needs.

RESPONSIBILITIES

  • Assists the Registered Dietitian in provision of safe and therapeutic nutrition services that meet the diverse needs of participants
  • Plans food production to coordinate with meal serving hours to ensure excellence, quality, temperature, and appearance of food
  • Plates the food for meal service according to instructions on participant dietary cards for diets, preferences, and special needs
  • Develops, updates, and maintains meal counts to communicate to food vendors, including meal adjustment counts and specialist diet needs
  • Prepares and cooks food in various kitchen equipment, such as ovens, smokers, grills, flat tops, etc
  • Measures and records temperatures of the food on delivery and regular intervals, including prior to serving to ensure food remains safe for serving 
  • Prepares alternate and pre-determined menu items, as needed
  • Review menu, dietary spreads, and other information related to daily menu to ensure compliance with menu, diets, and general meal services
  • Oversees dining room service, assists with serving meals, and checks meal satisfaction with participants
  • Checks and calibrates kitchen thermometers regularly
  • Assists with preparing meals for home delivery
  • Monitors and stocks food inventory and supplies; places orders to avoid food shortages, as needed
  • Collaborates and interacts with Neighborhood Healthcare staff and participants in a professional and positive manner
  • Provides cooking demonstrations for participants in the day center

EDUCATION/EXPERIENCE

  • High school diploma/GED required; bachelor’s degree in culinary arts preferred
  • Current CPR Certification and Food Handler Card
  • Professional culinary training or two years’ experience working in a fast-paced restaurant or catering facility required
  • One year experience working within elderly environment
