Overview

 The role of the Sous Chef is to constructively represent Hillsdale College in food and beverage preparation functions at the Rockwell Lake Lodge. Every person who works at The Rockwell Lake Lodge helps create the “Hillsdale Experience” for guests. We work as a team and each person holds a specific piece of the whole. Hospitality and total customer service are at the core of the experience. Specifically, the role of Sous Chef is responsible for, but not limited to:

Responsibilities

Food and Beverage Functions: Efficiently assist the Chef in preparing all food and beverage duties. Examples include everything from ingredient preparation to full meal preparation. Assist with planning, purchasing, prepping for all meals, and providing fine dining quality food and beverage offerings. Prepare chef quality breakfasts and chef quality dinners several days each week.

Menu Production: Assist Chef in developing and maintaining menu(s) for catering and restaurant needs of the Rockwell Lake Lodge. Manage Lodge garden and build relationships with local vendors.

Fine Dining Service: Willing to assist with all areas of fine dining, including, but not limited to, setting tables, waiting on tables, bartending and serving drinks, clearing tables, and cleaning dishes. Will help serve breakfast, lunch, and dinner as needed.

Training: Assist in training all Rockwell Lake Lodge wait staff to serve all food and beverages.

Compliance: Be knowledgeable of all Health Department restrictions and requirements. Follow standard operating procedures for food establishments according to the Michigan Department of Agriculture. Maintain a clean and safe environment. Learn preventative maintenance on kitchen equipment and conduct a health inspection with state inspector on kitchen. 

Communication: Communicate as needed with the Operations and Hospitality Manager and Chef regarding kitchen operations, problems, conflicts and/or difficult issues.

Hospitality: Greet and assist all guests in a pleasant and professional manner. Receive and appropriately direct all incoming calls as needed. Handle all aspects of guest reservations with standard operating procedures and in coordination with the Dow Hotel and Conference Center (check-ins, check-outs, payments, etc.) to assure protocol is followed.

Set-ups: Ensure that dining and conference areas are clean and set to customer expectations, that they are maintained to customer expectation while in use, and are cleaned and returned to normal use at the conclusion of the event.

Other Job Functions:

  • Be willing to learn and follow all policies, procedures and systems. 
  • Perform additional duties as needed/assigned by the Chef and Hospitality Manager
  • Recognize the importance of customer service; maintain good client/customer relations.
  • Be willing and able to perform any and all individual jobs required of the Lodge team. 
  • Seek training to enhance or learn new skills.
  • Be flexible in scheduled work time and willing to work other shifts including weekends and holidays.
  • Qualifications

    Required Knowledge, Skills and Abilities:

  • Must be a highly detail-oriented person, enjoy working with people and demonstrate a genuine desire to provide excellent customer service.
  • Be knowledgeable of office practices and basic office machines.
  • Be knowledgeable and experienced in sales and marketing skills.
  • Be knowledgeable and experienced in the standards and practices of the Hospitality Industry.
  • Have expertise in computers.
  • Possess good organizational and record-keeping skills, be detail oriented.
  • Have the ability to understand and follow oral and written instructions and to effectively express ideas, orally and in writing.
  • Have the ability to work well with people and able to keep calm and remain personable under pressure.
  • Be able to complete job assignments unsupervised.
  • Possess good judgment and maturity.
  • Ability to be on feet for extended periods of time, bend, stoop, climb and lift a minimum of 35 lbs.
  • Have the ability to operate Lodge equipment or willingness to learn operational procedures.
  • Have knowledge of safety procedures and requirements or willingness to learn procedures.
  • Vacation approval may be limited during peak activity periods.

    Personal Characteristics:

    The Hillsdale College Rockwell Lake Lodge Staff interacts with guests, clients, College staff and students. A neat and clean appearance and a pleasant relationship that is supportive of the College mission are essential. This relationship needs to be supportive and professional while maintaining confidentiality. All job responsibilities are multi-tasked, interconnected, and require synergy between the two managers.

    Education and Experience:

    This position requires a high school diploma and/or post high school education. Culinary education is highly desirable.
