POSITION SUMMARY

The incumbent in this position is responsible for overall (front of the house) food services and functions of the assigned food outlet. This includes monitoring the budget, ensuring guest satisfaction, and management of food and beverage staff. 

GENERAL ACCOUNTABILITIES

(The following statements are intended as general illustrations of the work in this class and are not all inclusive for specific positions.)

  1. Hire, motivate, evaluate and manage front-of-the-house staff in order to ensure employees receive adequate guidance and resources to accomplish established objectives.
  2. Establish department standards, guidelines, and objectives and maintains other administrative processes such as budget and staffing to ensure proper planning and efficient operation of the outlet.
  3. Evaluate performance of the restaurant by monitoring guest satisfaction, volume and cost in order to implement necessary changes to allow for the most successful operation of services.
  4. Conduct inspections of front-of-the-house areas to ensure compliance with procedures, security of company assets and guest and team member safety.
  5. Investigate and resolve guest complaints in order to maintain positive customer relations.

Requirements

WORKING CONDITIONS

Must have the ability to:

  • Operate in a working environment that is subject to varying levels of crowds and noise, the severity of which depends upon customer volume.
  • Ability to work varying schedules, including longer and irregular hours as business needs dictate.
  • Ability to work well under pressure and exercise tact and patience when dealing with team members and guests.
  • Ability to shift between food outlets as required.
  • Ability to lift up to 50 lbs. 
  • Ability to be on your feet much of the time. 

JOB QUALIFICATIONS

  • Two or more years of experience managing service staff in an upscale hotel atmosphere.
  • Ability to communicate effectively, both oral and written, with management, peers, and staff.
  • Two or more years of experience in restaurant management and operations, FOH and BOH 
  • Experience in counseling, coaching, and developing team members to sustain high performance and quality levels.
  • Demonstrated knowledge of and skill in creating and maintaining budgets within the department’s allowed expenditures.
  • Sound decision making and ability to overcome difficulties.
  • Micros and MyMicros experience a plus.

REGULATORY AND COMPLIANCE RESPONSIBILITIES

In addition to the other duties described herein, each and every employee has the following responsibilities related to compliance with laws and regulations:

· Attend required training sessions offered by the Hard Rock Hotel & Casino Lake Tahoe.

· Perform the duties described in compliance with local laws and regulations.

· Take the necessary steps to ensure minors are not allowed to gamble or loiter in gambling areas, drink alcoholic beverages, or purchase tobacco.

· Have knowledge of the ordinances, regulations, laws, policies, and procedures relating to the employee’s department. 

· Consult Internal Control Procedures and Policy Manuals for guidance.

· Report illegal activity to Security or the appropriate levels of Management.
