Reports To: Executive Chef

Work Schedule: 40-50 hours per week. Schedule is varied based on business need but a consistent weekly schedule can be expected. Evening and weekend shifts are required. 

Summary of Role: The Executive Sous Chef oversees all aspects of the restaurant culinary team, menu, recipes, and production. The role is focused especially on ordering, food and non-food organization, prep production, food creativity, repair and maintenance and getting the restaurant off to a solid start each operating day. The role interfaces with various vendors and food suppliers to accomplish their role. It monitors, coaches and improves the performance and success of the team and restaurant while advancing the vision for the menu and brand.

What We Need From You:

•2 years’ experience in a team leadership and team management position is preferred; a desire to lead and manage a team is required

•2 year experience in a full-service restaurant kitchen is preferred.

•1 year experience hiring, scheduling and managing a culinary team is preferred. 

•Ability to create daily specials that are consistent with the quality and tone of the restaurant menu

•A passion for creating memorable experiences of hospitality for guests

•Be able to communicate in and understand the predominant language of our guests

•Strong verbal and written communication skills

•Ability and willingness to move quickly, efficiently, and safely through the restaurant

•Strong work ethic to execute demanding mental and physical work under pressure

•Positive attitude that remains consistent under pressure

•Desire for continual learning and growth

•Schedule flexibility when necessary to meet demands of business

Key Responsibilities: 

•Lead the effort to create the best atmosphere and food the best within 250 miles

•Operationally involved in daily team and guest related execution. Work at minimum two volume evening shifts per week. (Executive Chef or GM may help adjust based on business need)

•Oversee the quality production of daily prep lists; coach team members to improve their prep skills & efficiencies daily

•Ensure the line executes consistent ticket times while achieving food production and plating excellence

•Be directly involved in scheduling, hiring, terminating & promoting hourly kitchen team

•Champion the restaurant’s 1-1 initiative and the company’s effort to become the ‘Best Gig on the Block’

•Direct the work of subordinate leaders; train, coach and support them to become better in all aspects of their roles

•Be directly involved in scheduling, hiring, terminating & promoting of culinary team

•Responsible for ensuring that all daily administrative duties are completed accurately, on time and in accordance with company policies and procedures. This includes but is not limited to: personnel/payroll related duties, new hire paperwork, orientations, performance reviews, training, food ordering, maintenance of food costing software, and monthly physical food inventory.

•Monitor compliance with restaurant and government regulations regarding food and alcohol service

•Ownership over restaurant cleanliness. Provide leadership for the completion & structure of daily opening, closing & cleaning duties

•Co-lead, with Executive Chef, the effort to promote collaboration & teamwork between FOH & BOH employees

•Create and produce the daily/weekly special as directed

•Collaborate with Executive Chef and other company chefs to assist with menu creation

•Communicate professionally & efficiently with guests and colleagues 

•Perform additional duties as dictated by business need and directed by GM, Exec Chef, and Managing Partners

Physical Demands: 

•Ability to be on your feet & walking up to 10 hours

•Ability to execute demanding mental and physical work under pressure

•Ability to climb stairs multiple times during a shift

•Ability to reach & lift above the head as needed 

•Ability to lift, balance and move items up to 30 lbs. 

•Ability to squat, bend, and twist your body as needed

•Ability to function in a work environment that is, at times, hot, loud, in tight spaces with colleagues, contains wet and slippery surfaces
