Description

Reports to: Executive Chef

Exemption Status: Hourly, Non-Exempt 

Job Summary:

The Banquet Cook is responsible for proper preparation and execution of food items required for all banquet events, including breakfasts, luncheons, dinners and special parties according to the Banquet Event Order. The duties include preparing ingredients, adhering to the menu on the BEO, performing cooking, baking, grilling, carving, garnishing, presenting and/or other buffet station duties as required while following food health and safety procedures. The position also requires setup, dismantling, cleaning, assisting banquet staff, and delivering positive guest experience.

Education and Experience:

At least two year of proven and related experience is preferred. 

Physical Requirements:

  1. Flexible with schedule, and long hours sometimes required, including working morning, afternoon, nights, holidays, and weekend shifts.
  2. Ability to be on your feet throughout the entire shift: prolonged periods of standing, bending, stooping, twisting, and walking, including up and down the staircases.
  3. Ability to prepare and cook food, including repetitive hand and wrist motion.
  4. Ability to work in a hot, and humid kitchen environment.
  5. Lifting, carrying, pushing, pulling or otherwise moving objects, products, and supplies up to 50 pounds.

  8. Must be able to follow instructions, and directions set by the manager on duty.
  9. Must be able to follow the health, safety, and sanitary practices for food handling, and general cleanliness at all times. 
  10. Must be able to follow company policies and procedures at all times. 

Essential Duties/Responsibilities:

  1. Be able to multitask, prioritize and manage time efficiently.
  2. Be able to quickly memorize and understand Banquet Event Orders.
  3. Be able to work with hot, cold, and hazardous equipment. 
  4. Be able to work as part of a team in a busy kitchen atmosphere. 
  5. Ensure all food is served according to BEO specifications.
  6. Be knowledgeable of plate presentations and buffet lines.
  7. Be knowledgeable of preparations and executions of all event menu items
  8. Be able to read recipes, and execute recipes accordingly.
  9. Measure and assemble ingredients for menu items.
  10. Be able to produce orders on an a la carte basis. 
  11. Ensure that all banquet food leaves the kitchen in peak condition.
  12. Please guests by providing a pleasant banquet experience.
  13. Collaborate with Chefs and Cooks to prepare meals during dining hours.
  14. Properly store food items at appropriate temperatures.
  15. Rotate stock items as per established procedures.
  16. Restock kitchen for subsequent shifts.
  17. Execute cold food production in accordance with standards of plating guide specifications. 
  18. Complete hot meal preparation by grilling, sautéing, roasting, frying, and broiling ingredients, and assembling and refrigerating cold ingredients. 
  19. Store leftovers according to established standards.
  20. Maintain the work area including counter tops, utensils, equipment and refrigeration in a clean and sanitary environment. 
  21. Complete cleaning according to daily and weekly schedules and dishwashing/pot washing as needed.
  22. Participates in and/or contributes to programs, committees, or projects designed to improve quality of service and employee productivity.
  23. Perform and complete the banquet cook’s opening, closing and prep work in a timely manner. All cooks are responsible for the state in which they leave Dunraven.
  24. Complete job responsibilities and performance objectives in a timely and effective manner, in accordance with Dunraven policies and procedures. 
  25. Adhere to proper food handling, sanitation, and safety procedures; maintains temperature and Hazard Analysis Critical Control Point (HACCP) logs as required; and maintains appropriate dating, labeling, and rotation of all food items.
  26. Adhere to compliance with operational standards, company policies, federal/state/local laws, and ordinance.
  27. Attend any scheduled training, complete any quizzes or homework assigned by the manager. 
  28. Keep Chef-on-duty (Manager) promptly and fully informed of all issues, and take prompt corrective action where necessary.

Other Duties:

  1. Setup and dismantle of buffet lines.
  2. Operate the industrial dishwasher, properly washes, stacks, and stores china, glassware, silverware, cookware, and storage containers. 
  3. Store and rotate stock according to established procedures of dry pantry, walk-in coolers, and freezers; and report any damaged or missing goods to Chef-on-duty (Manager).
  4. Provide training to employees when required. 
  5. Perform all other duties and responsibilities assigned at the discretion of management.
