Job Overview: The Head Brewer is responsible for working with the production team to create and foster a safe working environment; developing methods and SOPs geared towards team education, training, safety and quality; developing and maintaining recipes and processes to ensure quality and consistency; and working to develop and maintain supply chain relationships with raw material vendors to ensure quality and consistency.

Safety: direct safety programs aimed at keeping all members of the Dragoon Brewing Team healthy and safe during the workday.

Leadership: foster an inclusive culture of change and growth aimed at improving DBC staff’s technical knowledge, safety practices, and skills with regard to accuracy, speed, and efficiency.

Compliance: implement and ensure that GMPs, HAACP, Safety Protocols and Dragoon SOPs are followed at all times.

Quality: work with the quality team to ensure all wort and beer production meets quality standards. Develop, implement and communicate changes to recipes and procedures to maintain and improve beer quality, consistency, and shelf life. Identify and troubleshoot quality issues and develop corrective actions.

Forecasting: Working with management and the sales team, the Head Brewer will develop brewing projections and annual ingredient requirements and ensure they are met.

Coverage: Work with and assist production staff to ensure smooth operations and minimize gaps in staffing needs. Work with Ownership and Operations to ensure staffing levels are appropriate to meet production needs.

We’re looking for a self-motivated individual that also works well as part of a team. The right candidate will have prior related brewery production experience, management training or experience, and formal brewing education (or equivalent education and experience). The best candidate will be able to demonstrate leadership qualities and that they are detail oriented, thorough, and dedicated to safety and quality. They will also be able to think on their feet and adapt a plan to changing conditions.

Job description

Our Head Brewer is a brewing expert, a skilled cat herder/data wrangler, and loves the smell of a freshly mopped floor.

● Maintain institutional knowledge of all production processes in Brewing, Cellar and Packaging departments by training, cross training, and updating SOPs.

● Weekly production floor shifts and/or coverage to maintain skills and evaluate processes

● Implement and oversee training plans for new employees, as well as refresher training for current employees.

● Develop and maintain recipes, brew logs, and records to communicate production needs to staff and accurately capture and record transactions.

● Review records and maintain accuracy of production logs

● Work with Ownership and Quality to analyze and optimize production processes.

● Work with operations to identify raw material needs, establish contracts as needed and ensure adequate inventory levels, including issuing POs, assigning lot codes, and overseeing accurate lot counts.

● Work with ownership and operations to identify new equipment requirements and oversee installation and project implementation

● Work with facilities and operations to coordinate preventative and corrective maintenance on production equipment
