Job Description
Summary
Pastry Cook I will work in all areas of the pastry and bake shop environment and receive guidance from the Pastry Chef and management team. In turn, the Pastry Cook I will provide guidance to team members in absence of Pastry Chef and Supervisor. Knowledge and experience that will be gained and shared by Pastry Cook I will cover knife skills; buffet and banquet service; In Room Dining service; ala carte service; menu planning; ice creams and sorbets; buffet and banquet service; bread baking; chocolate work; plate design and presentation and other aspects of the patisserie field. Shift hours and schedules will vary throughout the work week.
Essential Job Functions
• Maintains dessert station mise en place and production sheets according to Chef specifications
• Prepares all recipes with no supervision as required for daily service
• Supervises other pastry cooks in their preparation of all recipes and job functions
• Advanced knowledge of pastry functions such as standard mixing procedures, baking time and temperatures, ice creams and sorbets, sanitation and proper handling of mise en place
• Advanced knowledge of chocolate work including tempering, making and handling chocolate garnishes, proper emulsifications, as well as confectionery items
• Assist Pastry Chef, Banquet Chef and Restaurant Chef in plating
• Plates desserts to order according to service standards
• Maintains station cleanliness during shift
• Completes daily production list by shift end
• Cleans station at shift end
• Ability to act as role model in absence of Pastry Chef or Supervisor
• Use proper communication when dealing with internal issues or concerns
• Complete tasks and projects delegated by your manager and assist other departments as business volumes and staff levels demand
• Responsible for assisting all team members in organization of kitchen items, to include, dry goods, kitchen equipment, storage containers, cleaning supplies and proper rotation and organization of all food deliveries
Qualifications
• High School diploma or equivalent
• A minimum of four years’ experience as a pastry cook in a luxury hotel or fine dining environment is highly preferred
• Culinary degree or equivalent preferred
• Ability to read recipes and follow instructions

Supervision Given and Received
Given: This position has no supervisory responsibilities.
Received: Works under direct supervision of the Pastry Chef. Tasks are assigned according to specific procedures, and work is checked frequently. Instruction, advice and assistance are readily available.
Work Environment and Physical Demands
• Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods of time
• Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces
• Must be able to frequently lift, push or pull up to 50 lbs. individually or with assistance
