ACC SENIOR SERVICES is Hiring a Culinary Services Manager Near Sacramento, CA

ACC Maple Tree Village is in need of a full-time (salaried) Culinary Services Manager. This is a salaried (exempt) position and includes company benefits, i.e., health insurance, paid time off, sick pay, holiday pay, life insurance, and 403(b) retirement savings plan.

GENERAL SUMMARY:The Culinary Services Manager is responsible for food planning, preparation, service, and supervision of the ACC Maple Tree Village Dining Services team.The position oversees the coordination of the Dining Services Staff, follows the Dining Services Department budget, and ensures dietary and nutritional excellence for residents.The Dining Services Supervisor reports directly to the ACC RCFE Administrator and has a consulting relationship with the Culinary Services Manager, ACC Care Center.The Culinary Services Manager position is an exempt, full-time position.

ESSENTIAL JOB FUNCTIONS:

  • Ensures that all aspects of daily food service are completed on a timely basis for both Memory Care and Assisted Living residents.
  • Develops and creates monthly menus for the community and for special community events, both on and off site.
  • Oversees food preparation services for sister properties as needed.
  • Plans and organizes assignments and workflow in order to achieve maximum effectiveness and efficiency.
  • Provides back-up coverage for Cooks, Prep Cooks and Culinary Assistants.
  • Participates in community programming, marketing and other events.
  • Follows all food service requirements, policies, procedures, applicable laws, rules and regulations.
  • Hires, orients, trains, coaches, and counsels subordinate staff.
  • Ensures adequate support staff is available to cover all meals, snack times, and special food activities throughout the day.
  • Conducts employee performance evaluations in a timely and thorough manner.
  • Delegates and follows up in an appropriate manner to ensure quality, equity, and consistency within the department.
  • Ensures food is of good quality, nutritious, attractively plated and served within appropriate temperatures.
  • Provides equally nutritious and attractive modified and special diets as ordered by a resident physician.
  • Ensures that the main kitchen, ancillary kitchens and dining areas within the community are kept clean, sanitary, attractive and ready for inspection at all times.
  • Ensures all recordkeeping and department logs are kept current and ready for inspection at all times.
  • Receives regular consultation from a qualified consultant, and keeps a written record of the visits.
  • Maintains supplies of nonperishable foods for a minimum of one week and perishable foods for a minimum of two days on the premises at all times.
  • Posts menus a minimum of one week in advance in a location visible to residents.
  • Retains menus for a min of six months, or as directed by the Administrator.
  • Practices conservation of equipment and supplies, keeping them clean and ready for use.
  • Preserves the dignity and self-respect of all residents at all times.
  • Recognizes and respects the individual resident’s emotional, social, cultural, and religious needs and beliefs.
  • Provides a variety of food with consideration for cultural and religious backgrounds of residents.
  • Partners with current residents and families to obtain suggestions and continued development on food service.
  • Ensures departments budget including food, supply and overtime is maintained and not exceeded without approval from the Administrator.
  • Maintains confidentiality regarding information about residents and their families.
  • Maintains constructive relationships with supervisors, managers, peers, and employees.
  • Works toward the benefit of the facility, establishing a positive work environment, demonstrating value to all staff and residents.
  • Performs duties according to company policies and procedure manuals, and promotes the Corporate Compliance Policy, including the Health and Insurance Portability Act (HIPAA), among subordinates.
  • Attends and participates in required staff meetings and training programs.
  • Other tasks as assigned.

REQUIREMENTS:

  • A high school diploma, G.E.D., or work experience contributing to equivalent knowledge and skill set. Culinary or food service training is preferred.
  • Knowledge of the requirements for providing a daily diet to meet the needs of the residents. Knowledge of and ability to plan menus, with direction as needed from a qualified consultant.
  • Knowledge of selecting, storing, preparing, and serving food in a safe and healthful manner. Demonstrated experience in preparing meals for twenty-five or more people, and catering of special events, is preferred.
  • Ability to supervise the work of others.
  • Ability to communicate effectively and clearly, and maintain a pleasant, helpful and courteous manner with staff, residents, families, visitors, and health care professionals.
  • Ability to understand and carry out directions or instructions, both verbal and written. 
  • Effective English communication skills, both verbal and written. Fluency in languages other than English is preferred.
  • Good character and a continuing reputation of personal integrity.
  • Ability to work in a multi-ethnic and multi-cultural environment.
  • Flexibility and willingness to work evenings or weekends as needed.
  • Must be at least 18 years of age.
  • Must be able to pass a criminal record review, including fingerprint clearance and submission of Criminal Record Statement (LIC508).
  • Certified in first aid, or able to complete certification training.
  • Must pass an approved and accredited food safety certification examination, or be able to obtain certification.
  • Possess and maintain good personal hygiene, and acceptable personal grooming and cleanliness.
  • Demonstrate that health condition allows applicant to perform the duties required. Submit an annual health screening report (LIC503).
  • Demonstrate proper use and knowledge of body mechanics and safety mechanics, and compliance with all OSHA (Occupational Safety and Health Act) regulations.
  • Working knowledge of computer programs such as e-mail, word processing, and Excel spreadsheets.

PHYSICAL DEMANDS / REQUIREMENTS:Physical demands vary from sedentary activities to hands-on resident care which includes lifting, bending from waist, stooping, and twisting as conditions warrant. May include infrequent assists of residents over 100 lbs. Objects or residents weighing more than 50 lbs. are moved only with the assistance of another worker and/or appropriate equipment. Hours of duty may be long and irregular, including some evenings and weekends. May be exposed to potentially dangerous chemicals.May occasionally lift or carry a maximum of 40 pounds, at a height of 3 to 4 feet, for a distance 30 yards.Employee may use hands for repetitive simple grasping, pushing and pulling, and fine motor manipulation.Employee should be able to bend, squat, kneel and reach frequently.

MENTAL REQUIREMENTS:Must be able to work with elderly residents, intervene safely and appropriately in challenging situations, and work compassionately with, and advise families, staff and volunteers.
